Salmon is not a traditional item in Chinese cuisine and that is the reason why it is rare on the menu. There are other fish species which are far better than salmon for texture and taste.

There is a Chinese saying: "a man's worth is judged by the part of the fish he eats." Any Chinese gourmet would go for the boniest part of the fish: fins, stomach, tail; and NOT so much the fleshy body area.

Chinese do cook salmon. It's just not a common ingredient in most Chinese restaurants, especially in China.

Firstly, the people that refer to the Chinese people eating raw fish are wrong. The Japanese eat raw fish along with sushi, Chinese people don't eat raw fish. The reason why they rarely cook salmon is because it isn't readily available to them unless you're in the UK in which case we steam it.

Every cuisine is based on the ingredients that were at hand. Salmon isn't native to any area near China.

The Chinese do in fact cook salmon - along with most other fish. They usually only leave fish uncooked if it's being prepared in sushi - and that's because of why sushi was created. The ancient Chinese needed a way to keep fish fresh, so they would keep their fish in vinegared rice for months to preserve the fish without having to cook it. It's like smoking or drying beef to make beef jerky.
