Boxty (a kind of potato pancake), scones, salmon, champ (mashed potatoes with scallions), bacon and cabbage, Irish stew (made with mutton, not beef), and soda bread (brown bread with dried fruit) are all traditional Irish dishes.

You can find recipes for all of these foods on line by doing a Google search. Or add a note to this post, and I'll email you recipes for them.

Make a stew using Guiness:
2 lbs. beef for stewing
2 onions, peeled and chopped
2 carrots, peeled and chopped
1 c. mushrooms, cut into quarters
2 stalks celery, cut into 1-inch lengths
1 bay leaf
3 tbsp. mixed fresh herbs (thyme, rosemary and parsley)
1/2 c. vegetable oil
2 c. Guinness
2 tbsp. Dijon mustard
2 tbsp. tomato paste
1/2 c. flour
2 c. beef stock
Salt and pepper to taste

Season and flour the beef. Brown the beef in oil over high heat. Add the vegetables and herbs and let cook a few minutes. Meanwhile, mix well the Guinness, mustard, tomato paste and beef stock in a bowl and add to the beef. Braise in a preheated oven 350 degrees for 1 1/2 hours. Adjust seasoning and serve.

If you are cooking it make Irish Stew as it is easy and cooks itself. You chop up some stewing steak and add onion and carrots add gravy or beef cube and cook it very slowly on a low heat or crock pot for about four or five hours, serve with potatoes. How about some Bailey's Irish Ice Cream for afters?
There is Corn Beef and Cabbage and what about Stovies?
Beef link type sausage, brown in a large pot, add beef cube and again onion and carrots and chopped potatoes, cook for about 45 miutes until potatoes are soft and a bit mushy.
