"The kosher law for fish is that it must have fins and scales. Therefore carp is ok."

Right conclusion, but wrong reason. Carp is kosher, but the standard is that a kosher fish must have fins and detachable scales. A fish whose scales may not be removed without tearing the skin is not kosher.

Wikipedia got this wrong.

Gefilte fish is often made of ground carp filets as well as pike and whitefish. It is definately Kosher.

My father and I used to catch them and my grandmother made the gefilte fish from them. With a bit of lemon and some chrain (beet horseradish), a wonderful treat.
