Ok, you can entertain on a shoe string and it is very easy.

Bruschetta

slice and toast your baguette
mixed together finely chopped garlic, chopped tomatoes, finely chopped fresh basil, finely chopped green onion, crumbled feta cheese and shredded italian cheese and salt and pepper to taste, then drizzle with olive oil. You can do two things from here, one simply bake this mixture for a few minutes or you can top each piece of bread and then bake it that way. I prefer the first one, it is easier to serve and you can put the baguette on a platter with the mix in the middle. This takes care of both your bread and your salad.

For your entree, brown some boneless, skinless chicken breast in a large skillet, when that is done add some chopped onion and garlic, saute this for a few minutes. Then add jarred alfredo sauce, some fresh chopped basil and some lemon zest. Pour this over the chicken and bake in the oven. When you pull it out, slice the lemons and place over the chicken for garnish and extra flavor.
Serve this with the pasta of your choice I prefer bucatini rigatti by Barilla. You may want to to have some french bread on the side for dipping in the sauce.

For dessert...

4 squares BAKER'S Semi-Sweet Baking Chocolate
1/2 cup (1 stick) butter
1 cup powdered sugar
2 eggs
2 egg yolks
6 Tbsp. flour
1/2 cup thawed COOL WHIP Whipped Topping



PREHEAT oven to 425°F. Butter four (3/4-cup) custard cups or soufflé dishes. Place on baking sheet.
MICROWAVE chocolate and butter in large microwaveable bowl on HIGH 1 min. or until butter is melted. Stir with wire whisk until chocolate is completely melted. Stir in sugar until well blended. Blend in eggs and egg yolks with wire whisk. Stir in flour. Divide batter between prepared custard cups.
BAKE 13 to 14 min. or until sides are firm but centers are soft. Let stand 1 min. Carefully run small knife around cakes to loosen. Invert cakes onto dessert dishes. Serve immediately, topped with whipped topping.

To help in saving money buy the boneless skinless chicken that is the frozen in the bag, buy store brands. Check out Walmart and Aldi.

Ingredients 1 12oz package wide egg noodles 2 teaspoons salt 8 oz sliced fresh mushrooms 1 onion, chopped 2 Tbsp butter 2 cups chopped broccoli (about 1/2 lb) 2 cans (6 oz. each) tuna, drained 1 can Campbell's cream of mushroom soup (10 3/4 oz) 2 1/2 cups grated cheddar cheese 1/3 cup milk 1 Tbsp cream Salt and pepper to taste 1 cup crushed potato chips Method 1 Preheat oven to 400°F. 2 In a large (6 qt) oven-proof pan, bring 4 quarts of water to a boil. Add 2 teaspoons of salt. Add noodles. Just before pasta is al dente (earliest cooking time minus 2 minutes), add the broccoli and cook for 2 minutes. Drain in a colander and set aside. 3 While the water is heating and pasta cooking, dry sauté the mushrooms in a frying pan on medium high heat. When mushrooms have given up their moisture, remove from heat and set aside. 4 After the pasta has cooked and is draining in a colander, use the pasta pot (the oven proof one) to heat 2 tablespoons of butter. Sauté the onions until translucent. Add the pasta and broccoli mixture back into the pot; add the mushrooms. Mix together. Add the tuna, can of cream of mushroom soup, grated cheese, milk and cream, and mix together. Add salt and pepper to taste. 5 Sprinkle crushed potato chips over the top and cook for 20 minutes at 400°F in the oven, until the topping has browned. Serves 6. tuna casserole

Appetizer? Very easy and very little $$ and time. Dont laugh at it, make it and taste it.

1 pack of soft cream cheese
1 can spam

In a bowl you will mix with your clean hands both ingredients until well blended. Pour it in a flat plate and form a ball (actually half a ball) with the mixture. Store in the warmest part of the fridge and when its almost time for the guests to arrive you will pour pineapple preserves over it and serve it with Ritz crackers. If yuo dont find pineapple preserves you can substitute it with apricot and orange but pineapple works best. I have made this at parties and it always goes fast. Please remember the clean hands.

and find some easy and economical recipes that you can whip
up in no time. Don't go to all the fuss with preparing. Sometime you can even go to your local grocery store and buy premade foods, that no one could tell the difference. Time is money!!

In my opinion first select a theme this way you can have a dinner party that your guests will never forget.

Since it's winter in the USA...I don't know where you live...but most people would enjoy some great hot foods. plus some cold sides to go with it.

On example could be the "SUPER BOWL" football game theme...

Buy some ground lean beef and make some meatloaves everyone now days love "diner food" that style. You can make it the night before and then bake it when the time is right. Guess what you can shape the meatloaves in the shape of a FOOTBALL...oh baby! lol

Gravy or a sauce of your choice that goes over the meat!
some like red like catchup or a creole red sauce and others prefer beef gravy so you can offer both or one.....if you buy the quick gravy in a pkg 3 for a dollar you can add your own additions and they won't know your secrets...add sauteed onions or sauteed mushrooms to the beef gravy.....and those flavors will kill the package taste. Just make sure you prepare enough. One package makes 1 cup so figure on 1 cup per two people....If you make the red sauce...you just saute celery, onions, green peppers, washed and minced parsley... cut very small and add tomato sauce to this and you can thicken it with a mixture of cold water and cornstarch. it will be just the right thickness....plus a dash of hot sauce or Chile powder..salt and pepper...taste it after it simmers to see what it needs..use the same measurement 1 cup for every two diners. It's always better to have enough and not run out!

Nothing like mashed potatoes go with meatloaf. You can also do this early too and refrigerate it in a casserole to microwave later.
Top with grated cheddar cheese and some fresh parsley or add chives cut in slivers for extra flavor.

Color talks!

You need something to catch their eye!
you just need a few ingredients and a salad dressing of your choice....or let them select their own. A creamy one or oil and vinegar. Decide what dressings you want and make them the night before...blue cheese and ranch are great and have a oil and vinegar type....
Ingredients for salad:
Sliced tomatoes
strips of peppers green, red and yellow the bell pepper type
cucumbers or zucchini and sliced red onions

Cut all the veggies and refrigerate them the night before you might save the tomatoes and slice them the night of the party so they are at their best. so at the right moment line up each item on a nice platter or individual plates then all they have to do is take the plate and dress it and take it to the table.

so far you have the main dish the meatloaf, potatoes, salad...what is next? the BREAD.everyone loves bread. How about french bread get it already sliced. In a saucepan pour some good olive oil and half butter. If you like garlic and who doesn't add a mashed clove to it and bring up to heat but don't let it burn..then remove the garlic and dip each slice quickly into this mixture....place on cookie sheet and bake in hot oven until nicely browned...you can also add Parmesan cheese to the top before baking....place in a nice basket with a napkin lining it....

meatloaf, potatoes, salad and bread...

what's next ...Dessert....oh yea....

another make ahead dessert.....CHOCOLATE..that is all she wrote..everyone loves it in all shapes and sizes...

so what about making individual plates with different forms of chocolate....wouldn't that be cool!.....all this should be done ahead the night before and ready to plate....and mini size they don't need a large portion....
A nice piece of good choc. candy
a mini size brownie
a small ball of chocolate ice cream
and if possible a red strawberry just one on each plate
sprinkle powdered sugar over all of it!

Salad and some variation on a grilled chicken dish. Have the guests bring in a bottle of wine.

start with devil eggs, celery and cream cheese as an appitizer. Serve a pasta dish, maybe a chicken in white cream sauce over linguini. Serve entree with asparagus baked with butter and lemon juice, sprinkle with cracked black pepper. Garnish entree with dried parsely sprinkles. Feel free to use red and/or green peppers julienned, or even fresh tomatoe in your entree.
For dessert, peel and slice fresh peaches, serve chilled with dream whip on top, and a garnish of cinnamon. Serve peaches in clear glass.

Too easy. use your creativity. you can hollow out a watermelon and cut a design in the top and fill it back up with the meat and other fruit. deviled eggs are alwayse popular, just make sure you put a tad of mustard in the filling, for color and taste.. vegiie dish and meat+ cheese tray.

Fruited grilled salmon, mashed skin-on potatoes, roasted seasonal root vegetables. For dessert and starters, go to Target or Sam's Club. I swear they have elegant frozen appetizers and desserts.

i think you could go with something simple, and cheap that maybe everyone would like... you know just in case someone is picky... you could try spaghetti and add some spices like onion and garlic salt... or you could get a recipe for alfredo, pasta is definently a good way to go if you want to make your guests happy .
