And, has anyone a recipe for a whiskey cake? I like "cakes with spirit," do you?

Nowadays people in Ireland have a vast range of Foods to choose
from, and can decide whatever they want, whether it is French,Italian,Chinese,Greek, or anywhere else in the Worlds
Cuisine, Years ago It was only the Rich that could choose an alternative to the basic Fare of the Working Class and Peasantry.
It used to be Bacon Cabbage and Potatoes or Carrots,Or Corned Beef.Nowadays People eat a lot of Pasta or Rice instead of Potatoes,they often eat Paella,or Chinese Food etc.
There is a lot of very good Restaurants to choose from anywhere in Ireland.

Soda Bread, Potato Farls,Irish Stew

Chocolate and whiskey cake
ingredients-225g(1\2 lb) digestive bicuits
8 squares unsweetened cooking chocolate
50g(2oz) butter
2 eggs
6 tbsp caster sugar
75g(3oz)candied cherries
50g(2oz)walnuts
200ml(8floz) irish whiskey
100ml(4floz)double cream -whipped

Crush the biscuits coarsely and keep them aside. melt the chocolate with the butter in a double boiler are sauce pan. cream the eggs and sugar in a bowl until they are pale and thickened,then fold in the chocolate. to this mixture add three quarters of the cherries and walnuts;save the rest for decoration. fold in all but i tbsp of the whiskey. oil a 22 1/2 cm baking dish, line with the crushed biscuits and then scrape all of the mixture into it. refrigerate for several hours r over night then take out 30mins before serving and using the whipped cream add the 1 tbsp of whiskey kept behind and pipe onto cake then decorate with the left over cherries and walnuts. Cornbeef and cabbage with carrots. And for dessert. A nice big piece of Bailey's Irish Cream cake.

Bailey's Irish Cream Cake


1 pkg. Duncan Hines yellow cake mix (without pudding)
3/4 cup chopped nuts
1 package instant French vanilla pudding
4 eggs
1/2 cup vegetable oil
1 cup Bailey's Irish Cream
Bailey's Irish Cream frosting (recipe below)

Preheat oven to 350 F. Grease and flour a 12 cup bundt pan. Sprinkle nuts into bottom of pan. Combine remaining ingredients in large mixing bowl. Beat four minutes on high speed, pour into pan. Bake 45 to 55 minutes until a toothpick inserted into the center of the cake comes out clean. Let cake cool and invert onto plate.


Bailey's Irish Cream Frosting

1 pound powdered sugar
5 1/2 tablespoons butter, softened
1/4 cup milk
1/4 teaspoon salt
2 tablespoons Bailey's Irish Cream

Beat all ingredients in a small bowl until fluffy.

champ!!

we were reared on it and it is yummmmmmmmm

boil some floury potatoes
mash them
add lots of butter and some milk and salt
then give it a good pounding
then add some chopped scallions
pound it again

then put a huuuuuge amount on a plate in a pile
make a hole in the middle - like a volcano
but a huge lump of butter in the hole
eat with a spoon from the middle
champ with melted butter
then lie down to recover

this is how my granny taught me to make it so therefore it is the right way!!

for a nice irish cake.8.once flour,4 once sugar .4 once butter 1/4 cup wiskey or baileys irish cream.drop of milk bake for 1/12 hours on no 4 gas or electric 150 keep looking at cake after hour

I have a recipe for Luck o' the Irish pie, which is made with Baileys Irish Cream. It is rich but oh so yummy!

I am Irish and I would eat Stews, Pizza, Chicken curry with rice not just traditional irish foods

Ulster Frys (slice of potato bread, soda bread, wheaten bread, a pancake fried and a fried egg and a couple of sausages))
Champ' (which is mashed potato with chopped spring onions, milk and seasoning with a big dollop of butter in the middle.)
And of course fish and chips.....
BUT I do like a Chinese Sweet and sour Chicken with fried rice :)
