I am a lacto vegetarian. I did follow veganism for sometime
A vegan diet can consist of:
soy or rice milk
soy butter
vegan cheese
beet sugar
(cane sugar processing typically takes place at two locations, the sugar mill and the refinery. During the final purification process, cane sugar is filtered through activated carbon (charcoal) which may be of animal, vegetable, or mineral origin.) - http://www.vegsource.com/jo/qa/qasugar.htm
tofu/soy
vegetables
no honey
no animal products
no eggs
but, being a vegan is usually about more than diet.IT's also about not wearing/using products derived from animals.
Check out http://www.vegsoc.org/info/vegan-nutrition.html you can find more specific information about the vegan diet there.

Well, yesturday I had french toast with margarine and maple syrup, chickpea tomato soup, a soy cheese pocket, orange juice, garlic bread, pasta, sorbet, a green salad and some popcorn.
The vegan diet is really varied, a lot of people don't think that until they are a vegan or know one.

Anything that doesn't have an animal product in it.
I eat lots of fruit, vegetables, and grains. I love stir fry, rice, broccoli, green beans, soup, and a ton of other stuff. If you don't want to give up the taste of the animal-filled diet, there's an alternative for everything nowadays, from mock meats to soy, rice, or other mock icecreams to mock cream cheese and sour cream.

Tofu and other soy products, vegetables, fruit, and water. Complex carbs are important. The most important thing is to get enough protein.
