I ate them at a local restaurante and they were vere good. I think the cook was from Oaxaca.

Receta ( Carnitas )
Ingredientes:

1 1/2 Kg. de carne de cerdo en trocitos, surtida. (costilla, lomo, espinazo),
1 taza de leche,
1/2 cebolla,
1 cascarita de naranja,
hierbas de olor,
manteca para freír,
sal y pimienta.

Preparacion: Fría la carne con la cebolla; ya bien dorada saque la cebolla, añada la taza de leche, las hierbas de olor y la cascarita de naranja; baje la flama y deje cocer sin tapar durante cerca de una hora y media; escurra la carne. Añada sal y pimienta; sirva con tortillas calientes y guacamole.

Carnitas Caseras

Ingredients

(6 servings)
4 tb Lard
3 lb Pork, cut into 2-inch cubes
1/2 md White onion, roughly sliced
4 Fresh marjoram sprigs, or scant 1/4 tsp dried
4 Fresh thyme sprigs, or scant 1/4 tsp dried
3 California bay leaves, broken up
10 Peppercorns, crushed
1 Orange, cut into eighths
1 c Milk
Sea salt to taste


Instructions

Heat the lard in a heavy pan, add the meat, and fry, stirring and turning it over from time to time, until lightly golden - about 8 minutes. Add the onion and stir well. Cook for 8 minutes longer or until the meat is well browned (remove onion only if it has burned). Add the remaining ingredients, cover the pan, and cook over low heat until the meat is just tender, not falling apart - about 20 minutes, depending on the quality of the meat. There should be plenty of pan juices. Remove the lid, increase the heat, and fry, stirring and scraping the bottom of the pan, until the juices have been absorbed - about 10 minutes. Drain off the extra fat and serve.

Hi, can you be a little more specific about what you have eaten?
I can tell you there are a hundreds of recepies and I would love to find for you exactly what you are looking for.

I supose you have eaten pork than is fried in a big pan with oil and "manteca" (pork or vegetal grease) and salt As if you were preparing french fries in MC Donalds. Then it is taken out and the excess of oil is reterired, then the meat is chopped and placed in tortillas with avocate and salsa, is that?

One of the reasons carnitas taste so good is that the pork is slow cooked in pure lard, sorry to report!
