I have dark skin around my neck, a "sign of insulin rejection" according to my doctor. How can I increase my chances of not getting diabetes? My grandmother has it.

You are smart to ask. Your doctor should guide you. There are three ways to manage glucose (blood sugar).
1. Diet
2. Exercise
3. Medication
Perhaps your doc could refer you to a diabetic nutritionist to assist you. I have diabetes, and trust me....if I had known then what I know now, I would have done everything I could to avoid it. There is a lot of stuff on the internet that is basically fat-shaming diabetics for causing their own diabetes with their bad diet and lack of exercise and general lack of moral fibre. A lot of this stuff is written by non-doctors, often with a supplement or diet or training plan to sell that they claim will completely cure diabetes if only people stick to it.
I read this interesting book https://tr.im/iferp that gave me a lot of useful tips about my disease and also a different perspective on the best therapeutical approach. I think you should read it too.

Try to stick to well balanced diet (low in saturated fat, high in fiber) and pursue controlled exercises. And do stick to regular check ups and your doctors advice.

Eat healthy. . . stay away from a lot of carbs, no sugar.... and exercise daily.
