Chocolate Amaretto Cake. You won't need the champagne just toast the new year with this cake.
Yellow cake mix
Sm. White chocolate pudding
4 eggs
1/4 cup Amaretto
1/2 cup Vegetable oil
1/4 tsp. Almond extract
Mix all above well
Bake in well greased bundt pan in 350 preheated oven for 45 min-1 hour or until toothpick comes out clean
In a sauce pan heat until sugar is dissolved
1/4 cup Amaretto
1/8 cup water
1/4 cup butter
1/2 cup sugar
While cake is still hot poke holes all through the surface. Spoon sauce over and let sit until pan is cool enough to handle.
Turn pan over and let cake finish cooling.
Thin 1/3 cup frosting with milk just enough to be able to drizzle it over the cooled cake. Sprinkle with almond slivers, and the warm Carmel sauce and drizzle that over the frosting & almonds.
This cake can get you pretty buzzed without the toast at midnight

If you want to make your friends really happy, make a Double Chocolate Gooey Butter Cake. This cake is not exactly low fat (you can tell by the name) but it is a real crowd pleaser and completely delicous. I got the recipe from Paula Deen from Food Network.
Double Chocolate Gooey Butter Cake
Butter, for greasing pan, plus 16 tablespoons (2 sticks) butter, melted
1 (18.25 ounce) package chocolate cake mix
1 egg, plus 2 eggs
1 (8-ounce) package cream cheese, softened
3 to 4 tablespoons cocoa powder
1 (16-ounce) box powdered sugar
1 teaspoon vanilla extract
1 cup chopped nuts
Preheat oven to 350 degrees F.
Lightly grease a 13 by 9-inch baking pan. In a large bowl, combine the cake mix, 1 egg, and 8 tablespoons (1 stick) melted butter, and stir until well blended. Pat mixture into prepared pan and set aside. In a stand mixer, or with a hand mixer, beat the cream cheese until smooth. Add the remaining 2 eggs, and the cocoa powder. Lower the speed of the mixer, and add the powdered sugar. Continue beating until ingredients are well mixed. Slowly add the remaining 8 tablespoons (1 stick) of melted butter, and the vanilla, continuing to beat the mixture until smooth. Stir in nuts with a rubber spatula. Spread filling over cake mixture in pan.
Bake for 40 to 50 minutes. Be careful not to overcook the cake; the center should still be a little gooey when finished baking. Let cake partially cool on a wire rack before cutting into pieces. Top with sprinkled powdered sugar.
*The top of the cake will crack slightly when you take it out of the oven, but once you put powdered sugar on top, no one will see that. This cake is AMAZING! You'll love it. Good luck and Happy New Year!

You can make a colorful fruit cocktail cake. All you do is buy any white cake mix and a can of fruit cocktail, drain the liquid then when you mixed up the cake batter, stir in the fruit cocktail and bake as usual. The cake will turn out very moist. You can use any white frosting for the topping.
The fruit makes a compliment being in the cake, it really does. It gives an added flavor.

Yes, an Eggnog Cake, and what time of year is more appropriate than now??? Got plenty of eggnog at the grocer's during the holiday, and this is simple:
Assuming you have some baking experience, you'll need two cake pans, 8 or 9 inch in diameter....
Butter and flour or use an aerosol baking spray on the cake pans....EVEN IF THEY'RE NONSTICK.......
1 Box "your favorite brand" of Yellow Cake Mix
Mix the cake mix according to the directions,
EXCEPT: instead of water, use the equivalent of purchased eggnog and instead of the oil, use the equivalent of brandy and oil to equal the amount as required on the box........Proceed with the directions as instructed on the box for baking, as far as time and temp......cool as directed......
YOU'LL BE AMAZED AT THE TASTE AND TEXTURE OF THE CAKE.......
I cheat and use a tub of cream cheese frosting that I've added enough rum or rum extract (or brandy or brandy extract) to make the frosting very maleable (workable, not quite as stiff as it comes out of the tub).........
Frost the cake as soon as it's cooled.......and enjoy........

How about Red Velvet Cake. You can get the mix at the store at the baking aisle. It cmes out a beautiful red color (like red velvet)It's just a festive cake that has something special about it. Use your creativity to dress it up.......and voila!!! Something special to celebrate the New Year. Hope you have a great 2007!

If everyone is going to be drinking and eating, I say make desert light. Pound or Angel Food cake with fruit sauce toppings, raspberry and pineapple. Fruit and pound cake is nice with a warm chocolate sauce too, like fondue.

New Year Eve Cake 1:
Ingredients:
NOTE: this receipe should be prepared at least 2 months
before baking to get the best out of it.
part 1
1/2 kg dates
1/2 kg cherries
1/2 kg cadju nuts
1/2 kg raisins
1/2 kg candid peel
1/4 kg ginger preserve
1/4 kg chow chow
part 2
1/2 semolina
1/2 butter
20 eggs
1 bottle strawberry of jam
1 bottle blackcurrent of jam
3 tablespoons of vanilla
1 teaspoon full of crushed cardamoms, cloves and cinnamon
1/2 bottle of arrack
2 cups of bees honey
Step 1
Chop finely all the ingredients listed in part 1.
Add strawberry jam, blackcurrent jam, honey, vanilla, crushed spices
one cup of bees honey, and two cups of arrack and mix well. Leave at least two month for marination.
>From time to time mix well the ingredients.
Step 2
Beat egg white and yolk separate. Lightly roast semolina until its light brown
and add butter into it. Beat lightly. Add butter/semolina mixture, beated egg yolks and whites
into the step 1 ingredients and mix with a wooden spoon well. Chop few cherries to give the colour.
Line well (few layers) of a baking tray and bake until is it done in a moderate oven. Don't bake
until "kara"!

Once the cake is done, leave it for cooling. Mix one cup of bees honey into one cup of arrack well
until disolved. Using a clean thick brush apply this mixture on top of the cake. Do this for couple
of days. If needed you can ice the cake with almond paste. If you add colour to the almond paste it
will give a rich look!
OR
New Year Eve fruit cake 2
WHAT YOU NEED:
1 box chopped dates
1 lb. candied pineapple
6 c. chopped pecans
1 lb. candied cherries
1 lb. coconut,fine shredded or other
2 cans milk
WHAT TO DO:
Mix all fruits together.
And then then add milk.
Cook at 200 degrees for 2 hours.
OR
New year Cake 3
16 eggs
675 g. sugar
450 g. semolina
450 g. butter
600 g. cashews
450 g. pumpkin preserves
1/2 nutmeg
2 cardamoms
2 cloves
1/4 teaspoon cinnamon powder
25 ml. golden syrup
grated rind 1 lime
25 ml. vanilla essence
2 tsp. almond essence
3 tsps. rose essence
Seperate the eggs and beat the yolks and sugar together in a bowl to form a smooth cream. Dry roast the semolina and mix well with the butter. Mince the cashews, chop the pumpkin preserve, grate the nutmeg and crush the cardamoms and cloves. Stiffly beat eight egg whites.
Beat the semolina and butter mixture into the egg yolks, then fold in the stiffly beaten egg whites followed by the cashews, pumpkin preserves, nutmeg, cardamom, cloves, cinnamon, golden syrup, lime rind and essences and mix well together.
Put mixture into a greased cake tin, lined with greased paper and place in a moderate oven (225 degrees) for 1 1/2 hours, or until a toothpick inserted in the cake comes out clean.
