I have a jar of open tahini. The label says nothing about refrigerating after opening. I'm assuming that it should be refrigerated, but it has a think fluid consistency, much like melted peanut butter.

So, does tahini require refrigeration?

I once read that you are to keep it airtight in the fridge, upside down (I think this may have to due to all the oil in tahini). However, I just keep it in the fridge right side up and seems to keep fine, as long as you mix it extremely well before using.

You must refrigerate after opening or it will spoil.

I would suggest it though I'm sure it can be left unrefrigerated. For the reason that sometimes the oil in it can go rancid.

yes it is best refrigerated.
