Quick Cherry Cream Cheese Pie

- 6 oz graham cracker crust, prepare as instructed on crust package
- 8 oz cream cheese, softened
- 14 oz can condensed, sweetened milk
- 1/3 cup lemon juice (bottled or fresh)
- 1 teaspoon vanilla extract
- 21 oz can cherry pie filling

In medium bowl, beat cream cheese until fluffy. Slowly add condensed milk, beating until smooth. Stir in lemon juice and vanilla extract. Pour in prepared crust. Chill for 3 hours, then top with cherries.

LEMON LUSH

2 sticks of butter, softened
1 3/4 (14 ounces) all purpose flour
1 cup chopped pecans
1 cup powdered sugar
8 oz cream cheese
16 oz Cool Whip
3 packages instant lemon pudding ***
4 1/2 cups milk

Preheat oven to 350 degrees.
Mix softened butter, flour and pecans, then press into a 13 x 9 inch pan, and bake at 350 degrees for 15 minutes. Cool for 20 to 30 minutes. You can turn oven off now. While cooling the crust, cream powdered sugar, cream cheese and 1 cup of Cool Whip, and spread on the cooled, baked crust. Prepare pudding using the 4 1/2 cups milk. Spread on top of cheese mixture. Cover with remaining Cool Whip and refrigerate overnight.

***If you wish, you can substitue CHOCOLATE INSTANT PUDDING FOR THE LEMON PUDDING.

Make a jello pie!! Take 1 pkg of your favorite flavor of jello ( not the sugar free type ) add 1 can sweetened condensed milk & 1 container of cool whip. Mix all together & pour into graham cracker crust ( can be made or store bought ) Chill for at least 1 hour before serving. Food coloring can be added for extra color ( I love to do cherry with red coloring, it looks very festive )

French Vanilla ice cream, about 3 teaspoons per serving, to go alongside the Piper Heidsik Brut non-vintage champagne. Piper has a hint of vanilla to it's bouquet if you drink it from a cabernet wine glass (you have to let the bouqfuet build the way it won't in a flute). It should be a great match.

All you need is one package of Chips Ahoy cookies, whipped topping, and milk. If you have a trifle dish, this is better. Otherwise a deep dish will work. Dip, not soak, the cookies into the milk and begin layering. Once you have covered the bottom of the bowl, add a layer of whipped topping. Keep building. We have made this with regular ingrediants, or for your dieting friends with Reduced Fat Chips Ahoy, non dairy whipped topping and skim milk!

Oreo Surprise.
Crumble a pack of Oreos in the bottom of a baking dish.
Mix together a can of condensed milk, one package of prepared vanilla pudding, and a tub of Whip Cream. Cover the crumbled oreos with the mixture. Finally, crumble a few oreos on top. It tastes like heaven.

I would stick with fruit kabobs, or grilled fruit with marscapone. If liquor is being consumed you don't want to overwhelm people with sugary desserts. You could also go with a plain cheesecake, or a moist pound cake with fresh fruit on the side. Stay away from chocolate and cakes with frosting.

STRAWBERRY SPARKLE CAKE:
1 Angel Food Cake
1 package (3 oz.) strawberry-flavored gelatin
1 cup boiling water
1 package (1 lb.) frozen sliced strawberries
1/2 pint (1 cup) whipping cream
2 Tablespoons sugar
Red food coloring
Place cake, widest side down, on a serving plate. Cut a 1-inch layer from the top and set aside. Cut around cake 1-inch from outer edge to 1-inch from bottom. Then cut around cake 1-inch from inner edge to 1-inch from bottom. Gently remove the section of cake between cuts, tearing it into small pieces; set aside.
Dissolve gelatin in water and add frozen block of strawberries, stirring to break up and mix berries. Fold cake pieces into strawberry mixture and pour it into cake shell. Place cake layer on top. Whip cream until thick peaks form. Stir in sugar and add a few drops of red food coloring until pink. Spread sweetened whipped cream over top and sides of cake. Decorate with whole strawberries if desired. Refrigerate until served, at least one hour.

cut up fruit like strawberries, pineapple, apples with melted milk or white chocolate for dipping. That way if people are going 'healthy' they can either skip the dipping altogether or at least modify how much they want. I did this at Christmas and it worked great!!
