Do I put the rice right on the roll mat?

You spread the rice on the noori, then flip it over. Wet the mat a bit w/ cold water, so the rice doesn't stick. Then start rolling! Be sure adn sprinkle w/ toasted sesame seeds (black look good, too) or fresh minced parlsey

Do this:

Lay down your bamboo rolling mat.
Put a piece of plastic wrap on the mat, covering it.
Put your rice on the plastic wrap.
Put your nori on the rice.
Put your stuffin on the nori.

Roll is as usual, but instead of just making sure you move the bamboo mat out of the way when rolling, you'll have to move the mat and the plastic wrap out of the way, as if they are one.

You're basically putting a non-stick coating on your bamboo mat. The technique is the same for rolling an "oridinary" nori maki roll.

That's right sister!!!!!!! BUT DON'T FORGET to add vinegar on rice before rolling.
