i love mushrooms with green, red, and/or yellow peppers.
some of the spices i use are garlic, pepper, salt, cumin, onion powder, basil, sometimes I'll use turmeric or curry powder sauteing everything

sometimes I'll even add broccoli and meat (which you could use tofu).

I never heard of stuffing mushrooms before but I've heard of mushrooms being stuffed into other foods like tomatos, onions, potatos, and that's what I was going to say; My favourite mushroom dish is baked potato with onions & sliced mushrooms on it. I cut the potatos with a cross slit and put some mushroom slices in the slit.. Sprinkle some sliced onions. Bake. After Baked I add some mushroom gravy to the potatos. Sometimes I decorated with a sprig or 2 of parsley! Another way to cook mushrooms is in Vegetarian style Chop Suey!

Saute chopped onions in a spoonful of oil, add 1 finely chopped tomatoes, 1/4 spoon red chillie powder, salt to taste and then add mushrooms .cook on low heat for about 10 minutes. Tastes good with rice, bread or tortillas.

I love them sauteed in a bit of butter or olive oil and garlic. Deglaze the pan with some dry, white wine and pour over a piece of lightly toasted rye. Top it with some swiss cheese (veg or not, depending if you're lacto-ovo) and pop it under the broiler long enough to melt the cheese. Yum!

Put them in spaghetti sauce, in an omelet (if you eat eggs, or with an egg substitute), wrap them in tin foil with other veggies and put on the grill, saute them and add to a veggie burger... I use mushrooms in everything!!

I would have to say they would be an excellent addition to a linguini pasta or a three cheese spaghetti.
