You usually don't buy it... you catch it. If you want to buy it ask your sushi chef where they buy from. Most places get it in already cut and cleaned and probably frozen.

Skin it and grillit on a little habatchi. If you mean like the Sushi? You are just better off letting them do it for you. There is a reason it can be pricey, It is really just not worth it to do yourself. The bones alone are a good reason to just go out for it!

My father caught his fishing, he didn't BBQ it but he did fry it, he took all the skin out and cut the eel into rings and he put spices and fried. It tasted Delicious.
