Going vegetarian need not look cheap. I am an Indian and My wedding was all Vegetarian, of course it had all the Indian Dishes and my American friends really liked it. Not sure where you stay but google to see if there are any Indian Restaurants around and you can save some money as Indian Dishes are not that expensive. If I may suggest try "paneer tikka masala", make sure u order it as Less Spicy though. PS: I like your thoughts about why you are planning for an all Vegan menu for ur wedding. I wish u a happy married life :)

When I was choosing food for my wedding, the vegetarian option was only $3.00 cheaper per plate. It wasn't a huge savings, but I chose it so that my vegetarian friends would have a decent meal. You would think it would be cheaper, but I think the prices also reflect labor, not just the bottom line cost of the materials. Some vegetarian dishes are quite complicated. I would recommend making sure there are some heavy pasta dishes or bread options to fill people up. If your friends and family know you're both vegetarians, I don't think they'd be surprised at the menu, to be honest. What about having indian food catered? They have plenty of vegetarian options. u r looking for north indian or south indian west indian? if u come to south india there are n number of dishes. u are looking for village type of wedding food or metro wedding food.? in south u have 4 states .andhra pradesh,karnataka,tamilnadu,kerala.which one ur looking for?
if it andhra pradesh. gongura leaf , horse gram soup, pulihora, bobbatllu, booraelu,rawbanana curry,gravy,dry, til chutney, pudinachutney, papad, tilrice, double ka meetha, suunundalu,tapaliroti, alot.
if u got to karnataka pappurasam, avalikke, kosambiri, bisibelibath,ragimudda, a lot
if u got to tamilnadu. sambar,rasam, vada, pongali, kosma sambar,etc.
