I have been vegetarian for 8 years and my husband for 14 years. I love to eat and therefore love to cook, here are two of my easy recipes for you, If they work out and you want more, let me know.
ARTICHOKE PIE ( or you can use any other vegetable)
Ingredients:
1 tbsp olive oil, 1 clove garlic, 2 (6 ounce) cans of artichoke hearts(drained), ½ cup italian seasoned bread crumbs, ½ cup greater parmesan cheese (divide in ½), 1 (9 inch) unbaked pie crust , 3 eggs beaten ( I use cage free organic eggs), 1 (8 ounce) package of mozarella cheese ( I use organic) you will need to shredded or buy already shredded.
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C)
Heat oil in skillet. Saute garlic until it starts to brown. Stir in artichoke hearts and cook for about 10 min., add the bread crumbs and ½ the parmesan cheese. When all heated through, transfer ½ or the artichoke mixture into the pie crust.
Pour eggs over artichoke mixture and sprinkle in the other ½ of the parmesan cheese/ Spoon the rest of the artichoke mixture in the the pie crust and top with shredded mozzarella cheese.
Bake in preheated oven for 45 min, or unit crust (cheese) start to brown.
It is one of my husband's favorite recipes and I sometimes add mushrooms, sundried tomatoes, or you can use any other kind of vegetable you want instead of artichokes.
EGGPLANT PARMESAN RECIPE
Ingredients:
1 medium eggplant sliced, 1 egg, 2 tbsp milk ( I use rice milk), Italian bread crumbs, ¼ cup olive oil, 1 jar of spaghetti sauce, ½ lb of mozzarella cheese shredded (I use organic), 1 cup of parmesan cheese. I usually have soup to go with this dish.
DIRECTIONS:
Preheat oven to 400 degrees F
Wash eggplant (no need to peel) and slice into ½ inch rings
Mix egg and milk ( I sometimes use more of this) and dip slices of eggplant into this.
Roll eggplant into bread crumbs until well coated
Grease a cookie sheet with oil and layer eggplant slices on sheet
Brush or spray more oil on top after layered. Bake for 15 min in 400 F oven., flip slices and bake other side for another 15 min.
Place baked slices of eggplant in baking dish pour sauce over the slices and sprinkle parmesan and mozzarella cheese over them. (If you need to make more than one layer due to your baking dish being too small just pour ½ of the sauce and cheeses and repeat again, last layer should be cheese) Bake for 20 or 30 min. I usually make salad and garlic french bread to go with this dish.

Kidney Bean Burgers
Ingredients
1 can red kidney bean
1 large onion
1 clove garlic
1 teaspoon dried mixed herbs
salt
pepper
chilli flakes
breadcrumbs
olive oil
Finely chop the onion and garlic and fry in oil until soft.
Meanwhile drain and wash the kidney beans and mash them until they are soft.
Once the onions are cooked stir in the beans and mix well. Add the herbs and some salt, pepper and chilli flakes and taste the mixture. Add more seasoning if necessary.
Leave to cool for a few minutes and then press into 4 burger shapes. Dip these in breadcrumbs and fry in olive oil until browned.

Be prepared to have your mind blown by this recipe..
SpoMac:
you will need a 2qt casserole dish, one jar of tomato sauce (prego etc), 2 cups shredded cheddar cheese, 14-16 oz macaroni noodles, and bread crumbs.
Make noodles according to the package (usually boil for 8 min) they should still be a little al dente. Preheat oven to 350 degrees F. In the casserole dish layer the tomato sauce, noodles,and cheese three times (like lasagna) and top with bread crumbs. Cook in the oven for 25 minutes or until the bread crumbs are slightly brown around the edges.
And prepare to be amazed by this wonderful combination.

You may want to start with a "Mac and Cheese" for the Two year Old using Tofu "Veggie" cheese with the Mac. Use a soy or Multigrain milk instead of Cow's milk and a vegetable margarine for the butter. The feel is not quite the same as usual mac and cheese, but close and healthier.

You could make an awesome veggie lasagna (use spinach and ricotta and mozzarella.....throw in some eggplant or zuccinni if you want......definitely add mushrooms!) or you can make black bean quesadillas with a side of rice and rfesh veggies. Just about anything mexican....just use beans instead of meat. Make a veggie pizza.....Stir fry........Veggie Chili........You can make awesome food that ANY non-vegetarian will LOVE!! My boyfriend is proof off that!!

INGREDIENTS
1/4 cup mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice
1/8 cup olive oil
1 cup sliced red bell peppers
1 small zucchini, sliced
1 red onion, sliced
1 small yellow squash, sliced
2 (4-x6-inch) focaccia bread pieces, split horizontally
1/2 cup crumbled feta cheese
DIRECTIONS
In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
Preheat the grill for high heat.
Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer the with vegetables. Enjoy as open faced grilled sandwiches.

You can make a morocan based pizza.
Pita bread with rocket, roast pumpkin and whatver else you want to put onto it. I think I've had it at a restarant before but I can't remember what else was on it.
Another is a morrocan salad. It's got rocket salad, roast pumpking, cous cous adn drizzled with plain natural yoghurt
