We have what we call "kesong puti", that's white cheese made from carabao's (swamp buffalo's) milk and cow milk. It's very soft and can easily be mashed. With its salty and sour taste(kind of like cottage cheese only better), its best eaten with delicious hot "monay", a type of soft, sweet, oval-shaped bread. Or with hot "pandesal", a very yummy roll sold very cheaply in small stores or in groceries. The best ones are packed in banana leaves and cut into thick squares(like soybean curd or tofu). This cheese is special and a little expensive. Those that you buy in malls in fancy wrappings don't taste as good as the ones you can buy in Laguna, one of the Philippine provinces. If you don't want kesong puti with bread, you can deep fry it and serve it with rice. YUmmy!

Emmental Cheese (A Swiss taste owes its name to the Emmental valley, near Berne in Switzerland). It has sweet-dry flavour and hazelnut aroma, best with wines & cocktails
And off course the Gouda cheese
