In Thai and Indian rice it is usually saffron or curry.
Curry is a mixture of many different spices which is determined usually by the region of the ethnic background.

in india we use basmati rice which has it's own fragrance,the fragrance varies with the quality of the rice ,whole spices like cinnamon,cardamon or cloves or a few bits of each added to the water while cooking rice also,adds to the fragrance,whole curry leaves/bay leaves cooked along with the rice impart their own fragrance,we also use chopped cilantro or whole mint leaves to impart their own fragrance,we take our pick .the choice is wide..

any spice/fragrance that you enjoy-warm-to a boil in the liquid that your adding to the rice-to cook! it'll give the rice that scent and taste !

White rice maybe. I eat white rice, it smells great! But, it depends what type of rice you use. Are you a chinese or other races? I am a chinese, so I eat chinese rice.
