INGREDIENTS
3 tablespoons vegetable oil
2/3 cup diced onion
1 1/2 cups uncooked white rice
1 cup chopped green bell pepper
1 teaspoon ground cumin
1 teaspoon chili powder
1 1/2 (8 ounce) cans tomato sauce
2 teaspoons salt
1 clove garlic, minced
1/8 teaspoon powdered saffron
3 cups water
DIRECTIONS
In a large saucepan, heat vegetable oil over a medium-low heat. Place the onions in the pan, and saute until golden.
Add rice to pan, and stir to coat grains with oil. Mix in green bell pepper, cumin, chili powder, tomato sauce, salt, garlic, saffron, and water. Cover, bring to a boil, and then reduce heat to simmer. Cook for 30 to 40 minutes, or until rice is tender. Stir occasionally.

Mexican Rice

Ingredients (use vegan versions):

1 cup of regular rice
2 cups of hot water
1/4 cup minced onion
1 minced garlic clove
1/4 cup peas
1/4 cup squared carrots
1/4 cup corn grains
1 small can tomato sauce
coriander leaves (
1/2 oz corn oil (to fry)
salt to taste

Directions:

In a pan, fry at high temperature the rice with the onion and the garlic until gold. Drain the oil and continue cooking at medium temperature. Add the tomato sauce and the vegetables.

Give a turn and add the hot water and the coriander (cilantro), bring temperature to low, add the salt.

Cover and let it stand for aprox. 20 minutes until tender.

Serves: 4

No one in Mexico would make a dish without chilies. Dice an assortment of vegetables, aubergine, red and green peppers, courgettes (zucchini) and fleshy tomatoes.. Slice onions garlic and chilies. Sweat off the onions garlic and chilies. Start to boil the rice and then add the prepared veg and the onions etc. Just before the rice is cooked add some canned sweet corn and a can of red beans. A squeeze of lime wouldn't go amiss. Or you can quarter lime and garnish the dish - add some coriander leaves at the very last minute. There you have it chili con carne without the carne.

huh?i am mexican and the rice my family makes is always vegetarian. we've never added meat or dairy to it. i can't tellyou the exact recipe, cause it's my mom that makes it,but we put in normal white rice, tomato sauce,or my mom makes her own saucein the blender, and onion for flavor,we don't eat it though, some salt and water. put it in the pan and let it cook!

Don't fry it, just put the rice in the pot with water and add peas, corn and carrots (frozen are good). Blend tomatoes and add them too. mix everything and just let it cook. Portions as you decide.

Hey Foxhunter Guy. Don't ya know chicken ain't vegetarian????

Chickens eat their own poo, which contains ex-body parts. So they CAN'T be veggie.
