My uncle does this one.
Take a cake pan, line it with graham wafers. Then pour jello pudding (the cooked kind will stay firm better) on the wafers, It can be anything you want chocolate or butterscotch taste the best. Then put more graham wafers on the top. The wafers will absorb some of the moisture from the pudding so they get soft. You have to let it sit in the fridge for about 2 hours. Then drizzle an icing sugar frosting on the top. Its so good. It can be made ahead of time. Don't know how fast this is for you, but its easy.

This sounds kind of cheesy, but it's very simple and I have received nothing but raves about it at potlucks where I had to prepare something fast.

You will need:
1 box Graham Crackers
1 large box Vanilla or Chocolate Pudding - Instant
Milk to make pudding
1 regular-size container of cool whip, thawed
2 cans cherry pie filling (I usually use the more-fruit kind)

In a 9' x 13' glass dish or pan of your choice, line the bottom with graham crackers. Mix the pudding according to package directions, and add the thawed cool whip. Mix thoroughly. Pour half the pudding on to the graham crackers and spread evenly. Make another layer of graham crackers, pour the other half of the pudding over those and spread evenly. Top with the last layer of graham crackers, pour both cans or pie filling on top and spread evenly. Refrigerate for a couple of hours so the graham crackers get soft and the pudding firms up. You can serve with additional cool whip.

Avacado Cream Pie.
16oz Cream Cheese, 1 tsp Lemon Juice, 1 can sweetened condensed milk, 1 large avacado. Blend till smooth and pour into gram cracker crust. Chill overnight. You can use a banana or strawberries if you don't like the idea of an avacado, but it's ALWAYS a big hit at parties, everyone who's bold enough to try it will love it. Guaranteed.

I have made this for a dinner party and it was a HUGE hit! Take a can of pillsbury crouisants the large size and butter flavored, then unroll each . In a bowl take a can of apple pie filling, add pecans, cinnamon and nutmeg and spoon some into each roll and wrap up as best you can, bake until golden brown and serve with caramel sauce, you can buy it in a jar. These look so beautiful and are so delicious!

This takes about 20 minutes to make and a few hours to set but it is very easy, impressive, and you don't even have to cook it. It was the first dessert gone at Thanksgiving.

Here's one that only takes a few minutes to make with just about no time to set:
