I use roasting bags too. Really like them because it holds all the natural juices in the bird. Hmmmmm yummy. To brown the bird real pretty, I take it out the bag about 1/2 hour before it is through cooking. Baste it with the juices. Then finish roasting uncovered the rest of the half hour. Next year I am going to try deep frying the turkey. I have heard it is really really tender and juicy.

my mom has her turkey in one right now,
My mom said that->
when you take the bag off put some of the driping on the top of the turkey and seasoings and do not try to take the turkey out of the bag just peel it back and cut off some of the bag

Definitely... A bag means nothing... Simply another cooking tactic. You can certainly remove it and bake it like millions have done before.
I actually start mine with backside up and then half way I flip it so the breast is up. Makes for moister breast meat I have found. But what works for one person doesn't necessarily work for others.
