In casseroles egg is normally used as a binder and/or to add bulk. You could replace the bulk with medium or firm tofu. For binding either use a starch of Xanthan gum. Why not ask them to introduce you to some of their favorite meals? Go shopping with them and you can learn about each others cooking and ingredients! That's my usual 'play' when meeting new 'cultures'; they learn my style and I learn theirs.

There is a vegan brand substitute that you can probably find in a natural market.
In all honesty, I would just avoid making a casserole in this case. There are tons of other foods that you can make that do not have eggs. I make casseroles all the time and never used an egg unless it was for breakfast.

You could buy egg substitute which has egg whites, starch, corn oil, skim milk powder, tofu and food coloring. They contain no cholesterol and can be used for scrambling and baking in place of whole eggs. 1/4 cup of egg substitute = 1 whole egg. Only some egg substitutes contain no egg products, and could therefore be considered vegan (you must read the label).
Or you could make your own:
1 tablespoon ground flaxseed
3 tablespoons water
Simmer flaxseeds and water in a saucepan for 5 minutes (more or less time depending on the amount you are making) until a thick, egg-like consistancy has been reached. Let cool before using in a recipe. Makes 1 egg's worth (can be doubled or tripled), and will keep in the refrigerator for about 2 weeks. Use about 1/4 cup (which is equal to 4Tbs) egg substitute for every egg.

Casseroles like in pasta with a sauce and vegetables perhaps? Just leave the egg out. Make the sauce a little less liquidity and add a touch more binder/thickener (arrowroot, cornstarch, or kudzu root - or Ener-gy's Egg Replacer which has mostly tapico starch).

Eggbeaters are an egg substitute . There are also many other Egg substitute products on the market. Most grocery stores carry them. I have high cholesterol and love eggs but should not eat them. Eggbeaters are a very good substitute for myself.

Maybe you could make a Vegetarian chili for them. It is easy, no eggs and has beans. Indian people eat lots of beans and they are usually used to spicy food too.
