Tortilla de guineitos Banana breakfast omelet 1 very ripe banana (an every day banana, or 3 guineitos niños - dwarf or finger bananas) 1 egg oil for frying Peel and slice the guineitos into thin slices. Fry them in medium oil (see fig. 1 below), turning after they begin to get soft and brown. Fry the other side a few minutes. When almost done use a spatula to squish them down and cut them up. When ready for eggs they should look like fig.2 below. Add a scrambled egg and cook until done. The finished tortillas should look like the first picture on top. Serve with French or Italian toasted and buttered bread slices and café con leche. This is a typical meal, you can serve it for breakfast, for lunch, for dinner as a side dish, or for snack. It's yummies!!!

My dad can't live without eggs. I've been to mexico and I swear like 80% of the time they eat fried eggs for breakfast, whether with chile, or tortillas or chorizo, or vegetables, it goes on and on.

I actually am German but, I speak spanish and I eat regular breakfast food served around the US. Like pancakes, eggs, bacon, hash browns, french toast. Just because you speak spanish does not mean you eat a specific type of food. I have given you some Hispanic inspired dishes.
Huevos Rancheros
2 tablespoons olive oil
1/2 cup chopped onions
1 green pepper, chopped
1 tomato, peeled and chopped
1 clove garlic, minced
1 jalapeno pepper, chopped (optional)
1 teaspoon dried oregano leaves
1/2 teaspoon salt
1 teaspoon hot pepper sauce (Tabasco is good)
1 (8 ounce) can tomato sauce
1/2 cup water
6 eggs In large skillet, heat olive oil.
Add onion and green pepper, cook until tender.
Add tomato, garlic, jalapeno, if using, oregano, salt, hot pepper sauce, tomato sauce and water.
Simmer, covered for 20 minutes.
Uncover.
Break eggs, one at a time, into cup and slip into sauce.
Cover and simmer over low heat until eggs are set, about 5 minutes.
Serve over tortillas or toasted English muffins, topped with some of the sauce.
