Green Tomato Salsa

12 x Poblano peppers
12 cup Seeded green tomatoes, finely chopped
12 x Jalapeno, cored, seeded, mince
24 tbl Fresh cilantro, chopped
6 tsp Ground cumin
24 tbl Red wine vinegar
3 cup Red onion, diced

Roast the poblano pepper. Peel, remove, and discard core and seeds, then chop. Mix in a medium size bowl with remaining ingredients.
Maybe if you quadrupled the recipe and gave away to friends, you'd be on your way to using up your garden's surplus!

Here is my favorite use of the green tomatoe besides fried. I dice them up in maybe quarter inch junks. I dice up a small onion to go with it. Sautee in a tsp of olive oil until soft just a few minutes. Remove from pan and drain on white paper towel. Beat 3 eggs and pour into hot skillet. Make your omlet and then top with tomatoe mixture fresh salsa and some ricotta cheese. this is a very healthy breakfast lunch and dinner and a great way to use those green tomatoes.

This is how I make salsa with them hope this helps...this is something I learned in Mexico while I lived there..It is a family recipe now!!

* 3 green tomatoes
* 2 fresh jalapeno chilies
* 1 large red tomato
* 1 medium onion, chopped
* 1/4 cup lime juice
* salt and pepper to taste
* 1/2 cup chopped cilantro



Place tomatoes and jalapenos in a pot, and cover with water. Bring to a boil, and cook until the tomatoes and jalapenos turn light green, about 15 minutes. Drain well, and place in a blender with the onion, lime juice, salt, pepper, and cilantro. Puree to desired consistency and chill.
