Does anyone know how to make merangues or the puff pastry dough that french people make without using the eggs?

Geez! Ask a hard one next time!

Meringue cookies are basically impossible to duplicate without eggs. I've tried a *few* recipes (and also tried from scratch) and the results are universally BAD! Horrid texture-either chewy, rock hard or shatter to dust when bitten. If you *really* want I can dig one up but don't recommend it. You *might* try the nut macaroon recipe using Ener-G as a possible substitute (link below).

By puff pastry I assume you mean "pâte à choux" like what is used in Eclairs, Cream horns and Cream puffs. Once again, you aren't going to make this without egg (it's hard enough *with* egg). However; Jonathan is on the right track with a recipe for standard puff dough. You can make your own or buy frozen Phyllo dough or Pepperidge Farm puff dough (I don't think either has egg and they might be vegan *maybe*) and cut strips to roll around cream horn forms, a double thickness glued with a little water can make an eclair shape. Cut the baking temperature by a third to reduce the rise, scoop out the unbaked middle (if present) and bake for a few additional minutes to harden off the shell. You can also use a no egg doughnut recipe to make eclairs or cream puffs.
While I'm at it I may as well point out that the fillings are normally eggy but *can* be replaced with sweetened soft tofu. Any tofu cake frosting recipe works well here!

never heard of merangues being made without eggs. only egg white and sugar is used for them

Haha, I really don't know ! I would presume that it is something to do with the volume of air in it, and as it heats up, the air expands, making it "puff".
