Maybe one of the links below might help you out. At your grocery store you can find frozen veggie friendly foods (usually near the frozen juice) like Morningstar Farms (green boxes) or (already mentioned) Boca (red boxes). Not much to cooking them, just toss in the Microwave and nuke!

Ingredients:
Veggie Chicken Strips
Green peppers/ red peppers
Onions
Any other veggies preferred
Canola oil or Olive oil(healthier)
Spike( or veggie Sal)- found at natural foods markets and should Be found at regular marketers like Wal-mart
Now, chop all your vegetables into the pan. Put a cup of oil in the pan. Put the pan to heat between medium and high. Put all your contents into the pan. Stir frequently. Season the stir fry. Should be ready between 7 and 10 minutes. If not cook for a few more minutes. Bon appetite!!!

I also suggest looking at Indian food. There are tons of vegetarian Indian recipes, and the use spices and vegetables in a way that creates a really complex flavor. Personally, I really like Aloo Ghobi(Cauliflower, Potatoes, and spices). Here is a site that just has vegetarian Indian dishes:

There are alot of good foods that are vegetarian.
Lentil Soup - Campbells soup makes a good vegetarian lentil soup.
Chick Peas- You can make a great salad with that, by adding chopped carrot, celery, chopped parsley or even cilantro for a different taste. top with a olive oil and basalmic vinegar dressing.
Veggie Burgers- Not bad the texture is a little different tasting but they are good.

there are TONS of good foods that are vegetarian, all you have to go is go to your local food store such as safeway, whole foods, pw, etc and look for the food that doesn't have meat. there are sandwiches that are easy to make, there's pizza, soup, pasta, bagels, meat substitutes if you like them, salads, fruit, vegetables, plenty of things. there are also snack foods like chips, pretzels, cereal, cookies, etc.

Try googling or yahooing (if you prefer) for recipes. Lots of sites gives how to make them.
