Need a catfish batter, cajan style recipe, cannot have eggs or milk in it. Apprciate your help.

Use cornmeal - stone ground yellow - add salt pepper and some Zatarain's Creole spice mix

Dip the catfish pieces in the dry mix and fry - delicious

I do the same as Toffy-but I add a tsp of cayenne pepper. This is a standard recipe for hushpuppies. You can also add cayenne to them if you like spicy food... 1 1/2 cups cornmeal 1/2 cup self-rising flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1 small onion, chopped 1 cup buttermilk 1 egg, lightly beaten Using a deep pot, preheat oil for frying to 350 degrees F. Using a mixing bowl, stir together the cornmeal, flour, baking soda, and salt. Stir in the onion. In a small bowl, stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended. Drop the batter, 1 teaspoon at a time, into the oil. Dip the spoon in a glass of water after each hushpuppy is dropped in the oil. Fry until golden brown, turning the hushpuppies during the cooking process.

While most batters are made with milk and egg, I would try 1/2 cup flour, 1/2 cup corn meal, 1/2 cup water and 1 tsp baking soda and a dash of salt ,pepper and any Cajun spice you like. You could also use all flour if you like. You can add flour or water to make the consistency you need.

For a change try indian batter:
1 cup channa flour
1/2 cup rice flour
pinch baking powder
pinch chilli powder (adjust to tast)
1/4 tsp cumin powder
and salt.
mix everything together with a little water. It comes very good with catfish and dover sole fish fillets

Renate said exactly what I was going to say. That works perfect. Just make sure the fish is moist, lay it in the batter mixture on both sides and deep fry away!

You have to add a little beer to the above recipe. This makes all the difference.

Same thing as Renate...you can spray Pam cooking spray on it to make sure the cornmeal mix sticks.
