carrots, potatos, brocoli, cauliflour, cucumbers, beans, corn, lettuce, peas... and any of the other "common" veggies? I have a good one for eggpland parmesean, but I would like to expand my menus!! Thanks!

I loooove this one: I make it with tofu, but you can make it w/o.

2-3 zuccinis, chopped
few handfuls of mushrooms, sliced
1/4 to 1/3 cup lemon juice
.5 to 1 tsp each: basil, garlic, oregano, thyme
salt and pepper to taste (or Braggs/soy sauce instead of salt)

fry zuccinis in a little veg oil for a few mins til starting to get soft. Add mushrooms and lemon juice, fry til mushrooms are done. Add spices, salt, pepper, stir, and remove from heat.
Serve with rice and whavever else suits your fancy :)

There's a dish that I made up you might like. Clean and cut yellow squash, zucchini, and tomatoes. Cook those in a pan with olive oil and whatever spices you like. While you're doing that cook some couscous also. I just eat those together. You could also add some tofu to the veggies.

Another idea is to look at Epicurious.com. It's my favorite website for recipes b/c you can find just about anything you're looking for. I usually only make recipes that have gotten a rating of 8% or higher.

Be creative. The best way to learn to cook is to get in the kitchen and cook. Buy a wide variety of vegies and staples. Make casseroles, stews, soups, salads, vegie pizza, and so on and so forth. There are also numerous web sites available. I prefer to invent my own dishes based on what I enjoy eating. You will be amased at how much fun and creativity you have. Just do not be afraid. Enjoy.
