how do you use it in the main dish?

The cream pie and 'whipped creem' recipes that are in "The new Farm Vegetarian Cookbook" are 'killers'. No one will *ever* know they're eating high-protein tofu instead of fatty heart clogging desserts! They've also got instructions on how to copy Feta cheese with tofu and 'ribs' that are good also. I've done meals (using the book) that have smoothies, salads with tofu dressings and feta, the 'ribs', grilled 'cheese' sandwiches, "chicken fried" tofu and chocolate cream pie and "ice cream' and every dish was made with tofu. Always well recieved by everyone (including the meat eaters).

We eat a lot of tofu and the following is a family fave...
cut extra firm tofu into chunks - about 1"x3" peices. Gently saute in soyasauce and a tsp fresh shredded ginger for abuot 3 mins.
Add shredded carrots, slivers of green onion and water chestnuts (you can use what ever veggies you like, these are our preferences). Saute for a few minutes more until veggies are softened. Roll up in lettuce leaves, add a dash of hoison sauce and enjoy.

1 pkg tofu, mashed with fork.
2-3 zuccinis, chopped
Several handfuls of mushrooms, sliced
oregano, thyme, garlic, basil, 1tsp each fresh or dried
1/3 cup lemon juice
veg oil

Fry the tofu and zuccinis in oil. Add lemon juice once tofu turns golden brown, then fry a bit longer to decrease moisture. Add everything else and fry until done.

**also works well with tempeh--just cut into strips, then half**

I like the Moosewood Cookbooks recipes for tofu (there are zillions) and the Not-Strictly-Vegetarian Cookbook has some good ones too.
