One of my favorite dishes is parmesian cheese thats melts over a bed of pasta and shrimp cooked with garlic and butter. But now I'm vegetarian and have yet to find something that can replace the shrimp in my recipe. Got an idea for somethin that would taste great with butter and garlic? Something with that light crunch that shrimp has? The only thing I could think of was mushrooms...

I must also add that I'm not vegetarian for health reasons... I don't believe in eating meat of any kind, including seafood. So don't tell me I can eat shrimp somtimes :)

The obvious explanation is to use a vegetarian shrimp substitute. The best place I've found for "fake shrimp" and other veggie seafood is a large oriental market, usually frozen.
Some of the substitutes are so tasty you nonveggie friends may not notice a difference.
For what it's worth, nearly anything would taste good with butter and garlic. A mild mushroom should work, too.

I am happy that you realize that Shrimps are not vegetarian, as they are living sentient beings. In Asia you can find vegetarian..everything, even chicken, with bones in a chicken shape. Loads of Buddhist people over here, so it's fun. I would recommend that you go down to China Town and ASK. Explain that you are looking for a shrimp alternative, vegetarian shrimp. I am pretty sure you will be able to find it. Good luck!

Why don't you try that mock crab meat/seafood that alot of people use around the Holidays to make dips out of, or try whole water chestnuts, they're crunchy. I thought vegetarians could eat fish and seafood though, like crustacians, but I could be wrong.

you can always make a tempura or bread the replacement of shrimp,
then par-fry it a bit till the batter is par- cooked so you avoid over cooking it lol
then stir-fry or cook it again with butter and garlic

How about some fresh sliced carrots? Toss in some broccoli too! Thats really good in a pasta dish.

well...no crunch...but add some freshly chopped roma tomatoes and some fresh torn basil...but at the very end...and those flavors go GREAT together! Good luck! Oh...and try using extra virgin olive oil instead of butter...it has a marvelous flavor..you can add a bit of butter if you must..makes it a bit richer.

i'm not a veggie, but once i tried Yves brand vegan meat substitutes, and the sausage one almost fooled me into thinking is was a meat product.
it wasn't "crunchy" like shrimp, but i think it would go well with the dish you were describing.

treat yourself to the shrimp every now and then. seafood wont kill you and if you dont eat beef you will lose the enzyme to digest it.
