I need a list of things to try from different countries like hummus, sushi, whatever. I'm doing one of those themed parties, we're going to order take out from different restaurants in my area with my girlfriends.

I meant take out dishes that we could order, we're having this whole Gilmore Girls Night, and as a tribute we're choosing the top best places to order out from buuuuuuuut, we haven't a CLUE what dishes to order.

For Indian I suggest Chicken Tikka or Chicken Tikka Masala (main dish),Navratnan Korma (curried vegetable dish), Naan (flat bread), vegetable pakoras (basically like fritters), oh and Kulfi (ice-cream-like dish with pistachios)
If you are in the mood for something spicy try Lamb, Chicken, or shrimp Vindaloo, but trust me its usually very hot! (at least around here it is served super spicy to the point of tears)

Chinese: General TSO's chicken is pretty widely available, beef and broccoli is as well

Japanese: Yakitori (chicken skewers), teriyaki or sukiyaki, shrimp and vegetable tempura, gyoza (dumplings)

As for sushi, that's best eaten at the restaurant in my opinion, but here we have something called a dragon roll which is a tempura battered california roll that may work for a party.

Italian: You can't go wrong with calzones (like pizza but without the tomato sauce), fried raviolis, pastas, tiramisu

Greek and Middle Eastern: hummus, baba ganoush, shish kebabs (may be under the name shish taouk), souvlaki, tabouleh, kibbi (also spelled kibbeh or kubbeh which is a fried meat pie), if you are feeling a little adventurous try the stuffed grape leaves, baklava (you need dessert of course! this is sweet with loads of nuts and flaky phyllo pastry, otherwise known as not for people on a diet)

Thai: Larb (I have also seen it spelled lerb and larp), panang chicken, shrimp, or pork

I'm including a few extras not mentioned in your question just in case you ever get a chance to try them:

Cuban/Puerto Rican: Papas rellenas (meat stuffed mashed potato ball that is fried and oh so good), croquettes (I like the ham or beef ones best), plantain chips, tostones (like much thicker versions of plaintain chips), yucca (also spelled yuca) either made as chips or boiled and drizzled with mojo, lechon asado (roast pork), capuchinos (sponge cake with sweet syrup)

Jamaican: Meat Patties (basically another form of meat pie), Jerk chicken, pork, or shrimp, stewed ox-tail, rice and peas

I have tried to spell each item with the spellings I have encountered most often, and tried to include the alternate spellings I can remember, but there are probably many many more ways that I have yet to see or have forgotten to write here.

Samosa - Dumplingesque pockets filled with boiled, fried and mashed potato and other ingredients.

Look for an authentic place, not your standard takeout. You want DimSum options like Dumplings, Char Siu, Steamed Bun, Egg Custart Tarts

Japanese:
Gyoza - Dumplings
Edamame - Great Veggie Appetizer
Yakisoba
Tonkatsu - Breaded Pork - very delicious
Sushi Rolls - Depending on your friends - California Rolls are the safest, if you have adventurous friends - Yellowtail Rolls, Tako Rolls, and Unagi Rolls or Unagi Nigiri.

Italian:
Fried Ravioli
Tortellini Alfredo
Garlic-Cheese Bread

Greek:
Moussaka - Eggplant Casserole
Souvlaki - Lamb and Veggies on Skewers
Gyros
Keftedes - Meatballs flavored with Oregano and Cumin
Baklava - Honey Pastry Dessert

Middle Eastern (includes many countries):
Turkish: Döner Kebab
Morrocan: Tanjia (Red Meat and Preserved Lemons); Couscous (grain)

South Asian:
Vietnamese: Try Pho (Beef Noodle Soup), Banh Bao (Steamed Bun), Spring Rolls

my personal choices
thai: basil chicken, panang curry
Indian: I am Indian so I love Indian food. A popular fav is tandoori chicken, Naan (bread), chicken tikka masala, if your vegetarian you can try saag paneer(spinach and cheese).
greek: gyros, hummus
middle eastern: kubideh (ground meat kebabs) hummus
italian: penne arriabata.
