Rollmops, borrowed from Dutch word (Originally: "rol 'm op" meaning "roll him") , refers to a pickled herring fillet rolled into a cylindrical shape around a piece of pickled cucumber or an onion.

The following are ingredients and method of making a rollmop:

Ingredients:
herrings
peppercorns
salt
onions, peeled and cut into thin rings
small chillies
white wine vinegar

Method:
*Fillet the herrings very thoroughly.
* Sprinkle each fillet with a few peppercorns and a little salt.
*Roll them up tightly and pack into jars.
* Add 1 chilli and a few onion rings to each jar.
* Cover with white wine vinegar.
* Leave in the fridge for about 5 days.
* They are then ready to eat.
* Delicious with sour cream.

My mom used to make a meat dish she called rollmops. It was thin sliced round steak, pounded until it was almost paper thin. It was cut into 3" squares. Small pieces of onion, carrot and dill pickle were placed into the center and the meat was rolled around them and secured with toothpicks. The rollmops were browned in a skillet. After browning, all of the rollmops were placed back into the skillet and covered with sliced onions, sliced mushrooms, and enough beef broth to just cover. They were braised for about 1 hour or until tender and served with mashed potatoes.
