Having a small party tomorrow night (8-10 people) and need some ideas for hor d'oeuvres. So far: chips, salsa, guacamole, veggies and dip. I was thinking about doing little bite sized baked potatoes too. Need more suggestions for things that are easy to make, good for a college aged croud, and inexpensive! Also- I'm a vegetarian so nothing w/meat as I don't want to handle it. Thanks!

Hummus and pita chips are good. There are lots of good hummus recipes on the 'net, too, and it's super easy to make. Then, you can just cut some pita into small wedges to serve with it.

How about mini veggie pizzas? You could use mini bagels as the "crusts," use raw dough and make your own crusts, or use a cookie cutter to cut small crusts out of a large, pre-made one.

Cheese cubes on toothpicks would be good -- and you could include a variety of cheeses.

How about veggie egg rolls? You could get them premade or make your own. If they're small, serve them whole, but if they'r elarger, cut them on a diagonal and serve with sweet and sour AND mustard.

Some grocery store bakeries have hors d'ouvres sized bread. You could make mini-sandwiches from it, or make larger sandwiches and use fancy shaped cookie cutters to make smaller ones.

Go to a surplus store like Sam's & get the party bags of frozen mini quiches - the spinach is wonderful. They also have mini veggie pizza bites. A cheese ball made with shredded sharp cheddar, cream cheese, dried chives, a few good dashes of worchester sauce & a couple drops of hot sauce. Mix all together by hand, adding milk a teaspoon at a time til sticking together. Shape into a ball, or rectangle shape & cover with finely chopped pecans. Serve with assorted crackers & a small dish of spicy mustard. Garnish plate with fresh fruit such as grapes, strawberries, etc. It will be a hit!!

How about Ham Pin-wheels?

Buy:

thin sliced sandwich Ham
Cream Cheese
Horseradish

Mix 2 or 3 tablespoons of Horseradish into the Creamed Cheese.

Lay a piece of Ham out on a cutting board and spead Cream Cheese on it.... then roll Ham into a pinwheel. Cut into pieces 1/2" to 3/4" wide and place on serving plate.

For a decorative method, you can stick a toothpick in each pinwheel and place a stuffed Olive on the top of the toothpick.

Easy to make and delicious to eat.

Pizza Pinwheels

1 can (8pz) Pillsbury refrigerated crescent dinner rolls
2 tbsp. grated Parmesan Cheese
1/3 cup finely chopped pepperoni (about 1 1/2 oz) OPTIONAL
2 tbsp chopped green bell pepper
1/2 cup shredded Italian cheese blend (2 oz)
1/2 cup pizz sauce (from 8-oz can)

1.Heat oven to 350 degrees. Spray cookie sheet w/cooking spray. Unroll dough and separate into 4 rectangles; firmly press perforations to seal

2. Sprinkle Parmesan cheese, pepperoni (optional), bell pepper and Italian chees blend over each rectangle.

3. Starting with one short side, roll up each rectangle; press edge to seal. With serrated knife, cut each roll into 6 slices; place cut side down on cookie sheet.

4. Bake 13-17 minutes or until edges are golden brown. Meanwhile, heat pizza sauce. Immediately remove pinwheels from cookie sheet. Serve warm with warm pizza sauce for dipping.

You might want to consider making a few with the pepperoni for those that aren't vegetarians. Nothing is worse than having your guests rush home to eat.

Bruschetta with Feta:

1 lb Roma Tomato (Remove seeds and dice)
Olive Oil to taste
Basalmic Vinegar to taste
Salt & Pepper
Fresh Basil (Julienned)
1/4 -1/2 cup crumbled feta

<===== Mix above ingredients and serve in a bowl with a spoon and toasted bread/crustini surrounding it on a plate.

7 layer bean dip- Superior Snascking - maybe too superbowl :(

In a casserole dish layers of the following as desired:

Refried beans (must do)
guacamole
cheddar cheese
sliced black olives
Sour Cream (try mixing a package of taco seasoning in the sour cream then layering it..yummy)
tomatoes
Jalapeno Peppers
etc etc


A Torta: Sundried Tomatoe & Kalmata Olive
Mix gorgonzola grumbls with a block of Cream cheese until smooth. separate mixture into three parts. in a mold layer one part chees mix then diced sundried t's. then one part cheese, then diced olives. Then cheese. This creates a layered cake effect. It is helpful to layer the mold with plastic wrap to make removal easy. chill and serve with bread and crackers.

Mexican Cream Cheese Rollups:
1 8oz package Cream Cheese, softened
1/3 cup mayo
1 2.25 oz chopped black olives
a few green onions sliced thin or chopped
2 jalapenos, chopped. not fresh, use the ones in a can or jar.
1 package flour tortillas

Mix altogether
Spread mixture on flour tortillas, cut into bite sized pieces.
may be served with salsa for dipping.
I like to use the flavored flour tortillas ( I use the one that is jalapeno, cheese flavored )
I find it easier to cut into pieces after they have chilled about an hour.

Grab a bag of Italian meatballs from freezer section of supermarket, bake as instructed. Meanwhile, heat up a bottle of chili sauce and two cups of grape jelly. Serve mixed together.
They go like hot cakes!!!

Mini-reubens.

Buy crossaint dough OR you can buy a box of puff pastry sheets.
Put a little corned beef and sourkraut inside each one and bake according to the directions.
Serve with thousand Island dressing.

Make a lot of deviled eggs. They always go great. Also, Cook up several pounds of shrimp and peel them and serve cold on toothpicks with a zesty shrimp cocktail dipping sauce and lemon wedges..
