I've read on many sites that by cutting out meat you reduce your risk of cancer up to 40% and your risk of heart disease by 60%. I also just read on the American cancer Institute website that a recent study showed that eating meat was a prime factor in stomach cancer (which I found out my uncle has). My advise is do the research and don't worry about finding alternatives. Try Soy products, soy is a bean and completely naturally and full of protein. Yes, there are some chemicals but there are in meat too and you get to by pass the hormones and fat. I would skip the tofu because it's fattening and not really tasty in my opinion. Try more vegetables and a small amount of soy.

If you have Trader Joes or Whole Foods in your area they are great for Vegitarians. I used to be a vegitarian when I was younger but now I just eat chicken and fish. This is a personal choice and I don't think there is anything wrong with it. There is a myth that you won't get the needed nutrition with meat eliminated from your diet. You just have to make sure and get protien and other important nutrients from other foods that you eat.
There are lots of great Vegetarian cookbooks out there too.

Carol J. Adams and Sarah Kreamer make several good vegetarian and vegan cookbooks. Also, http://www.vegcooking.com/ is PETA's website for vegan and vegetarian foods. Having a Trader Joe's or natural food store around really helps for the hard-to-get stuff such as tofu, TVP, meso, etc. Although they are all healthy, don't live on them because going on a business trip would starve you. Most "vegetarian meats" are highly processed. You shouldn't make them a substantial part of any diet. Any more than regular meat.
If you want to be healthy, ditch fast food entirely. If you're going to eat meat, eat organic, grass fed, range raised meats.
Most super markets have a surprising array of veggie meats, but again, don't make them a staple. Use lots of fresh foods. Veggies, fruit, raw nuts.
And buy Sarah Kramer's vegan books!!!

am on all vegetarian diet...
vegetables can me cooked into gravy with tomatoes potatoes & onion pastewith spices...all u hav to do is stack up spices mild boil before cookin in oil...should do th etrick & there r many sites that do with gr8 vege dishes...
