Fine ground meat, either beef, chicken or in some middle eastern countrys lamb or muttom, with the addition of onions, garlic, parsley, cumin, chili peppers, oregano a bit of binder, usually farinous product, and a small amount of other seasoning.

It probably all started when the prepared the donair for gyros, and had leftover, applied it to small skewers and cooked it on the grill, and prepared it in the same fashion as gyros, I like mine on a spit roll, onions, tzatiki sauce, cheese, and baked in an oven, the topped with greek hot peppers.

I love these. I used to have them all the time in Germany. They are huge sides of lamb or beef that they sort of cook on a rotisserie then shave slices off of meat, put it on a roll with cucumber dill yogurt and veggies. Yum. I miss them.
