Just peel away the first layers of leaf and cut excess stem, place in a bowl of cool water and let soak to be sure to get all the sand and dirt out. Rinse and steam in steamer or boil in a little water. After they are steamed I saute them in a little butter, salt and a little sugar. They are so good right out of the garden.
