Jalapeno wraps. jalapenos, bacon, cream cheese(garlic and herb flavor) cut jalapenos into half, remove seeds( you may want to use a glove) spoon in cream cheese then wrap with bacon. Place on baking pan in a 350 degree preheated oven for about 45 minutes. My family loves it and the recipe came from my brother in law, who is Mexican.

Djaj Matisha Mesla(Chicken with Tomatoes and Honey)
3-4 pound chicken, cut into quarters
3Tbs oil
1 lrg onion, grated
2 lbs tomatoes, peeled and cut into peices
Salt and plenty of pepper
1/2 tsp ground ginger
2tsp ground cinnamon
1/2 tsp crushed saffron threads(can use powdered)
2 Tbs honey (can use up to 4--suit to taste)
3/4 cup blanched almonds, coarsely chopped (toasted under broiler)
2Tbs sesame seeds, toasted
Put all ingredients in large pan EXCEPT honey, almonds, sesame seeds. Cook gently, covered, turning chicken occasionally, for about 1 1/4 hours. (meat should fall easily from the bone)
Remove the chicken, and continue to cook the sauce over medium heat until reduced to a thick, sizzling cream. Stir as it begins to carmelize, and be careful that it does not stick or burn. Now stir in the honey, return the chicken peices to the sauce, and heat through. Serve hot, covered with the sauce and sprinkled with the almonds and sesame seeds.

Ma Por Tofu. It's a Szechuan dish, spicy (mild to extreme!) and easy to cook.
Ingredients: A block of soft tofu, diced. Mash some garlic (to your taste). Chop some green onions. Dark soy sauce and hot chilli sauce.
Saute garlic for a little while, add tofu, add a tablespoon dark soy sauce, add as much chilli sauce as you like, all the time stirring gently. When it's done, sprinkle the green onions and, voila, enjoy your strong and hot dish.

my favorite is gyros, its a greek sandwich. its a mixture of seasoned beef and lamb that is made into a big roll called a cone, it is cooked on a vertical grill and cut off in thin strips and put on pita bread with onions and cucumber sauce, also called tzatziki sauce, and they are so delicious, its kind of a regional food and hard to find in some places, but around chicago you can get really good ones.
