my mother is getting out of the hospital & has lost about 20 pounds..not good in this case. i would love to hear some suggestions for high protein meals for her..only restriction is no potatoes, and easy to digest ie. not spicy, acidic etc ..any tofu suggestions are great too!

Salmon is good.., smoke salmon sandwich for lunch is nice. Here are some recipes for salmon and tofu.

<<< Smoked Salmon and roasted vegetable lavash >>> (Serves 4)

200 g sliced smoked salmon
2 large red capsicums (700 g)
6 baby eggplants (360g)
4 medium zucchini
4 lavash
250 g rocket leaves
1 teaspoon sinely grated lemon rind
2 teaspoons lemon juice (optional)

1) Quarter capsicums, remove and discard seeds and membrances. Roast under grill or in a very hot oven, skin-side up, until skin blisters and blankens. Cover capsicum pieces in plastic or paper 5 minutes. Peel away skin; slice spsicum thinly.
2) Slice eggplants and zucchini thinly lengthways, place in single layer on oileed oven trays. Place under hot grill or in hot oven until lightly browned both sides.
3) Roll each piece of bread into a cone shape, fill with eggplant, rocket, zucchini, capsicum and salmon. Sprinkle with rind, drizzle with juice.

(you may replace lemon juice with Mayo or whipped sour cream)

<<<<< Salmon Cutlets with Pineapple Salsa >>>>>> (Serves 4)

4 Salmon cutlets, cut 2.5 cm in thick
pepper + salt

1) Preheat barbecue (oven) to a medium heat.
2) Sprinkle salt and pepper on Salmon cutlets
3) Cook salmon cutlets on lightly oiled barbecue grill for 3-5 minutes each side or until flesh flakes when tested with a fork.

Pineapple salsa

160 g fresh pineapple, roughly chopped
2 spring onions, finely chopped
2 tablespoon lemon juice
3 tablespoon finely chopped corriander
2 tablespoons finely chopped fresh mint

Put all the ingredients in a food processor or blender and process to combine. Serve at room temperature with salmon cutlets & boiled vegetables.

(Again, you may serve the grilled salmon with just mayo or tartar sauce if she doesn't like pineapple.)

<<<<<<<< Tofu Salad >>>>>>>>> (Serves 2)

1 Tofu (firm one, cut into big cubes)
200g Lettuce (3 different kinds)
6 Cherry tomatoes (cut into half)
2 cucumbers (sliced)
50 g toasted almond (chopped)

dressing
1 tablespoon extra virgin olive oil
1 tablespoon sushi vinegar
1/2 fresh lemon juice (squeezed)
1 tablespoon soy sauce
1.5 teaspoon sugar
1 teaspoon sesame oil

1) Put tofu on top of the green + tomato in to a salad bowl
2) Pour the dressing on the salad, sprinkle the almond on top

<<<<<< Sweet Corn Tofu Soup >>>>> (Serves 4)

1 can Cream of Sweet Corn Soup (Del Monte)
1/2 pack of soft tofu (cut into cubes)
2 eggs (beat)
1.5 cup of water
salt to taste
2 teaspoon corn starch (disolve with a bit of water)

1) Heat the Sweet Corn Soup with water in a pot, when boiled, add tofu into the soup, stir for a while
2) add the corn starch to thicken the soup
3) beat the eggs and add into the soup, stir quickly to make egg drops, then turn off the heat. Add salt to taste

<< Sauteed mushrooms with Oyster sauce on Tofu >>(Serves 2)

100 g of button mushrooms (sliced into thin slices)
50 g of dried shitake mushroom (soaked with water till soft, sliced)
1 pack of firmTofu (sliced into 1/2 inches thick)
1 clove of garlic (crushed)
1 slice of fresh ginger (crushed)
4 -5 tablespoon of cooking oil
green onions (finely chopped)
2 teaspoon of corn starch

Oyster Sauce:
1 tablespoon of oyster sauce
1 teaspoon of soy sauce
garlic power
1 teaspoon of sugar
1 teaspoon of corn starch
1 tablespoon of cooking wine

1) Mix the oyster sauce ingredients into a bowl, set aside
2) Drain the tofu, dry with paper towel, sprinkle corn starch on tofu surface.
3) Heat a frying pan with strong heat, add cooking oil and salt and ginger, when you smell the fragrance, add tofu in the pan and fry till the tofu turned golden brown. Remove and drain. Set aside.
3) Clean the frying pan, heat the pan with strong heat, add cooking oil and garlic, stir fry the mushroom quickly for 1 or 2 minute, add cooking wine and stir quickly, then add oyster sauce mixture into the pan, stir fry till the mushrooms are cooked. Turn off the heat and add a few drops of sesame oil to make the mushroom sauce shiney.
4) Pour the mushroom sauce on the tofu. Sprinkle the green onion on top. Serve with steamed rice

leafy greens are great for building up your stamina (go vitamin K!) And don't forget Mushrooms! There's so many to choose from, go great in stir fry, awesome with tofu. Nuts are great to snack on, and can add some texture to all that gooey stuff. If she eats eggs (a long shot I know), they're ideal for regaining muscle condition.
Keep in mind that too much protein can be difficult to digest on a fragile stomach. A balanced diet is best. Check with her doctor to see what they would recommend.

Vegetarians do not eat fish.

Whole grains, beans, soy products, nuts are all good sources of protein. Is she actually on a high protein diet? If not, then she should get the recommended amount according to her weight and age and not anymore then that.

arent beans pretty high in protein. i dont think they are real easy to digest tho. if she will eat fish go for tuna and salmon or trout. they are the omega three fatty fish so they should help in that area.

Get Boost or Ensure (it really isn't bad - I had to live off it for over a month when I had jaw surgery and I barely got sick of it - chocolate is best). You can get the high caloric OR high protein variety and both Boost and Ensure are lactose free making it easier to digest. I think protein is definitely important, but try to focus on the caloric intake as well b/c that's what your body needs for energy and to gain weight. Protein just helps build and repair muscle and skin tissue. Eggs are a good source, but 1 egg can contain the entire daily recommendation of cholesterol intake, so try to avoid the yolks. Also, Heinz maple style baked beans taste great and are full of protein. Yogourt is also good for patients (without gelatin for vegetarians) as it helps to form good bacteria in your digestive system which in turn combats the bad bacteria. You can try making pasta salads with whole wheat macaroni etc mixed with miracle whip (or soy mayonaise), some zesty onion relish and a bit of sweet onion mustard, salt to taste. Sandwiches with whole wheat bread are good also. One of my fav's are grilled baked bean sandwiches -grill the outsides of the bread and put a thin layer of baked beans in the middle. Be careful when buying baked beans that you get the kind without pork! Heinz has a few varieties, maple being the best. Fresh multigrain sandwiches are good too - try loading them up with soy deli meats and veggies (tomatoes might be too acidic). Cucumber slices, broccoli/alfalfa sprouts, lettuce....

For tofu, try getting the firm kind and cutting it up into one inch cubes or rectangles and dipping them into a batter (either just a mixture of flour, water/milk/soymilk and salt or you can add an egg to the mix as well) and deep fry them in canola oil. They are excellent eaten with sweet and sour sauce or plum sauce (VH is best).

Yorkshire Pudding can make a nice lunch or side dish and tastes great. It's simple to make too, here's my recipe:

1 bread pan or 1 6-muffin tin
1/3 cup flour
1/2 cup milk or soymilk (both work well)
good pinch of salt
1 egg
canola oil

Preheat oven to 425 C, whisk flour, milk, salt and egg in a small to med. sized bowl until fairly smooth and place batter in the freezer for rapid cooling. In the meantime add a little less than 2 tbsp of oil to the bread pan (or 1/2 tsp of oil to each muffin section if using a muffin tin) and place pan in the oven for 3 minutes. When time is up, remove batter from the freezer and stir before pouring into hot pan. Pour slowly (if using a muffin tin about 2 spoonfuls batter each until gone). Bake for approx. 16 minutes. Let stand for a couple minutes, then turn out onto paper towels and serve hot. Yorkshire pudding is fun to make as it rises like a souffle.

Also, try to balance out every meal with veggies for fibre (very important!).

Fish and rice are good. Try http://www.allrecipes.com and type in your requirements in their search engines. I find their recipes to be easy to use and really quite good. I shall say a prayer that your Mother is spared any more poor health.

stir fry veggies with tofu - anything with beans. Lots of leafy grean veggies too.

fish, nuts, tofu, peanut butter... kidney beans, well all beans...

potatoes are mostly carbs.. but being sick she'll need carbs.. just a plain potato can't hurt...?

anyways... plums, prunes, soymilk, soy products like morning star items (check them out)

apple butter... peanuts... almonds... coconut.
