Falling out of a bar in Beijing with some friends of mine we spied a man making kebabs on the roadside. My friends bought 10 kebab sticks for a dollar, as we were eating them they were trying to find out what the meat was but the vendor couldn't speak English and we couldn't speak Chinese.
One guy said "cluck cluck" and flapped his arms, - No -
One said "oink oink" - No -
The vendor smiled and said "miaow miaow"
I immediately threw mine away, my friends continued munching. It tasted like chicken - therefore it is white meat and you should use white wine.

as with all meats the leg and thigh will be the dark meat and the breast and wing will be the white meat, on four legged animals the loin will also be white meat

Dark meat. Chianti or Shiraz. I'd also recommend a Generals Tsao sauce. My local Chinese restaurant makes it like that and it is delicious.
