How do you make that cheese and how do you cook the dish with the cheese? I've also seen it with peas and cheese. I've moved from the area where the owner of the local Indo-Pak grocery used to help me select spice packs. So I need to know how to do it from scratch.

It's called saag paneer. I just buy the cheese premade, but you can do it like this:
Use 2 liters of milk (not 2% or anything, you need the full fatty milk).
Lime juice (to separate the milk)

Boil the milk, and when it starts to boil, add the lime juice ( I don't know how to measure it out, just do it by eye, start with a little, and see what it does)
then pour it into a muslin cloth (or something that can allow the liquid to seep through, but keep the curdled milk)
then allow it to dry (15-30 min), and if needed, press out the excess milk

to make the spinach, it's best to just clean it, then to put it in a blender.

First, sautee a small onion in oil.
When it's brown, put your cheese and spinach (chopped int he blender), and put your spices in. We always put tumeric, red chili, garlic, ginger, cumin, and a few green chilis in.

then just cook it til the spices soak in, heat up your nan, and enjoy!

1 large onion
6 garlic cloves
1 ounce fresh ginger
1 lb frozen spinach, thawed
1 cup plain yogurt
4 ounces buttermilk
2 teaspoons red chili powder
2 teaspoons garam masala
1 cup half-and-half
6 ounces paneer cheese
salt (to taste)

Grind the onion, garlic, and ginger into a fine paste.
In a medium saucepan, combine the paste, spinach, yogurt, buttermilk, chili powder, and garam masala.
Simmer at medium heat for 20 to 30 minutes.
Mash the ingredients with a potato masher.
Add the half and half. Simmer until the mixture has a creamy consistency, 10 to 15 minutes.
Add the cheese, simmer 5 minutes. Season with salt.

Its called Palak Paneer. where palak is spinach and paneer is cottage cheese. it is a north indian dish.
Spinach chopped 1 big bunch or 2 frozen spinach boxes (10 oz box)

Paneer 1 cup cubed

Onions, finely chopped 3/4 th cup

Ginger, finely chopped 1 teaspoon

Garlic, finely chopped 2 teaspoons

Green chili, chopped 1 number

Garam Masala 1 teaspoon

Oil 3 to 4 tablespoons

Salt to taste


1. Heat the oil (oil for frying) and fry the cubed paneer until light brown. Keep aside.

2. Boil the spinach with ginger and garlic. Drain and puree.

3. Heat the oil in a pan and add the green chili and onions. Sauté till light brown. Add the garam masala, spinach puree and salt to taste and cook for 5 to 6 minutes.

4. Finally add the fried cheese cubes. Garnish with heavy cream and garam masala.

You can buy that cheese "paneer" from any Indian market. You can buy it frozen

From scratch I think it's milk and vinegar, not sure

Cavatappi with Spinach
INGREDIENTS:
8 cups coarsely chopped spinach
8 cups hot cooked cavatappi
1 cup crumbled feta cheese
1/4 cup olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper
2 (19 ounce) cans chickpeas (garbanzo beans), drained
4 cloves garlic, crushed
freshly ground black pepper
lemon wedges (optional)

Combine first 10 ingredients in a large bowl; toss well. Garnish with lemon wedges, if desired.

PALAK PANEER - but don;t eat it if you have kidney stonew problem - but if you intake it more you can have stone problem in kidney
