Here is a short passage I found that includes a reference to the 7 Sundays of Lent.
In this 40 day period each of the 7 Sundays of Lent has a special significance. It is during the first Sunday of the Lenten period that we celebrate the Rite of Election.

there are only 40 days in Lent, therefore a 7th Sunday is only possible if Lent was at least 43 days long.

Well if anyone refers to seven Sundays in Lent, then the first of those Sundays must be the one just before Lent. That day is the start of three days of pre-Lental "shriving" (confessing), with the final of those three days being Shrove Tuesday (shrove deriving from the word shrive). That being the case, then the seventh Sunday must be Palm Sunday, the final day of Lent. Alternatively if the first Sunday of Lent is the one AFTER Shrove Tuesday, then the seventh Sunday is Easter Sunday. However I still think the question is flawed.

The seventh Sunday of Lent is Easter Sunday otherwise known as Resurrection Day.

It's called, "You missed the Easter Bunny."

OK, lets count to 40 together.

(1)Wed (2)Thu (3)Fri (4)Sat (5) 1st Sun
(6)Mon (7)Tue (8)Wed (9)Thu (10)Fri (11)Sat (12) 2nd Sun
(13)Mon (14)Tue (15)Wed (16)Thu (17)Fri (18)Sat (19) 3rd Sun
(20)Mon (21)Tue (22)Wed (23)Thu (24)Fri (25)Sat (26) 4th Sun
(27)Mon (28)Tue (29)Wed (30)Thu (31)Fri (32)Sat (33) 5th Sun
(34)Mon (35)Tue (36)Wed (37)Thu (38)Fri (39)Sat (40) 6th Sun

Ahhh, not so fast, you say. In the Catholic liturgy, Sundays are not counted as part of the 40 days! So, let's do that again.

(1)Wed (2)Thu (3)Fri (4)Sat () 1st Sun
(5)Mon (6)Tue (7)Wed (8)Thu (9)Fri (10)Sat () 2nd Sun
(11)Mon (12)Tue (13)Wed (14)Thu (15)Fri (16)Sat () 3rd Sun
(17)Mon (18)Tue (19)Wed (20)Thu (21)Fri (22)Sat () 4th Sun
(23)Mon (24)Tue (25)Wed (26)Thu (27)Fri (28)Sat () 5th Sun
(29)Mon (30)Tue (31)Wed (31)Thu (33)Fri (34)Sat () 6th Sun
(35)Mon (36)Tue (37)Wed (38)Thu (39)Fri (40)Sat () 7th Sun

So, the "7th Sunday" would have to be Easter, which is not part of Lent.

Moral of the story... Don't believe everything you read.
