Its because the chips soak it up and mixed with all that fat and oil you have no chance of tasting it. Oven chips are better for that but lets face facts.....you can't beat the chip shop!!!

If there from the chip shop it's probably watered down. Ask them not to put any on if your taking them home and put it on yourself. A good malt vinegar is best. I find if they put it on in the chip shop it soaks into the paper and makes the chips soggy too.

Yes I agree, I always have to add more when I get home. The vinegar is probably watered down so it goes further.

Traditionally malt vinegar. If you must eat fish 'n chips, it stops the lard coagulating on the roof of your mouth, and staying with you for hours.
