the biggest thing you need to remember when becoming veggie is that you have to replace protein from meat with other sources.
red beans and rice, avacados, cheese(unless you trying vegan), yogurt, bocca burgers are good if you dress them up like real burgers with lett.,tom.,etc.,mac and cheese, just steer away from the soy cheese and tofu is no fun unless you really know how to untilize it...kind of gross if you're not careful!:),nuts, smoothies...there are lots of options...you just have to work on it and you will find things that you like.

Some of the "Quorn" range is pretty good. Check out your local health shops
some will guide you to their best products. Vegi-Roast in the freezer section
(in a green box) a must for Sunday lunch.

Easy Soup Recipe.

Any veg. Potato`s, Tomato, Swede, Carrots, Pumpkin, or a mix of root veg.
Always add an onion.
Veg Stock Cube (Knorr) range is pretty good.

Add any diced veg, pour enough water to cover the vegetables add stock
cube, bring gently to the boil, then leave to simmer until all the vegetables
are very soft (25-30min's).
Allow to cool slightly then pour in a blender or food processor and puree
until smooth, add seasoning, thin with extra liquid if required, *re-heat for
5 mins or allow the soup to go cold and freeze.

*Also you can add (COOKED Wild Rice or Basmati) for extra filling at the end.

I hope this helps.
Lain.

It all depends on what level of vegan/vegetarian you are. If you only eat veggies then you're stuck with little variety in your foods. If you allow some dairy then you can disguise your food with cream sauces, cheese sauces or tomato sauces. You can use bell pepper, onions, fresh tomatoes, sautee all this in some olive oil or vegetable oil, add some tomato sauce, salt & pepper to taste, and then add the vegetables and eat this over rice(brown or wild) if you want to keep as organic as you want or regular white rice. You can use cream of mushroom soup or asparragus or celery, dilute it with water and make a casserole type dish, top it with bread crumbs, provided you eat grains, and if you eat cheese, grate some and top over some and cook in the oven. Use your brain. There are lots of things you can use to disguise vegetables. Also eat fruits, nuts, etc. You need proteins as well as complex carbs, and fats (olive oil). Make homemade dressings for salads, Eat tofu instead of meats, this is made from soy. Improvise and eat healthy.
