House pour is usually the cheapest liquor or wine the place is able to buy on a long term. A night spot would normally have a house pour cognac, a house pour whiskey, a house pour vodka, a house pour gin, a house pour wine, etc.

There is no fix brand that is a house pour. For example, some place may use Finlandia as house pour vodka and some Absolut, etc. If you want something specific, ask. But first ask what is their house pour.

It all depends on what the spot stocks in its well. (The well is the place that bottles of alcohol are stored for quick pouring at the bartender's knees.) Some places use quality brands, others use the cheapest. First, ask what the well liqueur of choice is and then if it is acceptable to you then order it. I personally worked as a bartender for 8 years and I always wondered why people ordered top-shelf liqueurs for their mixed drinks. If you mix it with more then one ingredient, forget the top-shelf stuff because you cannot taste it anyway. I heard that does not give you a headache but that is not correct. Anything that you drink and has a high sugar content is more likely going to give you a headache. Plus drink enough to get a headache, I doubt that high quality alcohol is going to save you. I am all for ordering the good stuff when it is alone or with one mixer but anything else forget it. Finally, you should always specify what you want. You have to drink it.
