Most American "Chinese" is really Cantonese style. Typical Chinese or Mandarin cooking is hardly ever represented. OH! and forget about the fortune cookie, they don't exist!

Things have been changed to the American tastes such as Sweet and sour in America should just be called sweet - there is hardly any sour! Over in Beijing, it is sweet, but not overly so, but it also has a nice sour tang to it.
Many of the other differences come in from that very few dishes from most regions are represented, the rice they use here is different, oils they use are different, and it is harder to come by some of the needed ingredients.
In short, after being in Taiwan and China, I can no longer stomach most Americanized Chinese food. If I want to eat it here, I make it myself.

Actually the Chinese food in America is already modified to suit the Americans......the American Chinese food is a fusion of chinese cooking in western style will be less greasy compare to what they cook in China. Even like us in Malaysia....our Chinese cuisine also mix with local Malays cooking and came out with what they call "Nyonya food " ( Straight Chinese Food )...The food willl have a lot of spices and herbs and rendang ( a type of thick curry cook until almost dry ).......if compare to chinese food....

The Chinese food in America has been adapted to American's taste buds. Its different when you are eating authentic chinese food.

That easy! In America, the Chinese food served in restaurants are always cooked in either sweet & sour sauces or oyster sauces. Therefore, all the dishes taste the same regardless of the ingredients used.

besides adapting the taste for american palettes, i think the range of chinese food in america is way insignificant to the vast choices of chinese cuisine according to the many dialect groups and regions in china

Don't forget that in China, the genuine spices are more readily available and it's all so much fresher too. Just imagine the difference between fresh pizza and frozen pizza. ^^
