it seems really vauge to me.

What do they do, are they healthy?

i thought that if it was rennet, it would be listed as one of the ingrediants, instead of being called just an enzyme.

can there be other enzymes theyre refering to?

If not, whats the vegetarian 'cheese' to eat?

if enzymes aid digestion, shouldnt i keep eating the cheese with them in it?

i hate the idea of eating calf intestines though..

The enzyme is what is taken from the calves stomach and sometimes is called animal rennet. There are vegetarian rennets as well but those cheese labels are usually clear about it. If the label says microbial enzymes, it's not from an animal.

Many of the Cabot cheeses are made using no animal rennet but you need to read the label. I have a few of the cheddar cheeses and they are animal rennet free. This brand is the easiest to find in the average supermarket.

It is RENNET usually! IT IS STOMACH LINING FOUND IN CALVES STOMATCH'S! I AM A VEGETARIAN AND DON'T EAT IT! Microbiral enzymes are vegetarian and Horizon Organics, Organic Valley and other companies offer animal reneet/enzyme free cheese. Always check the label, it will usually say animal rennet free or something if it is. Wild Oats and Whole Foods offer rennet free cheeses, so good luck finding them!

Stay away from Horizon. They are NOT organic. Total Meatrix.

Anything pasteurized has very little enzymes or bacteria left in it. Enzymes aid digestion.

Culture would be a better word. Like the culture used to create Yogurt, Keifer or Kombucha.

Walmart carries a very limited selection of vegan cheese...no enzymes listed. That's a great question, though. I had been wondering the same thing myself.

There are some vegan cheeses. I don't know where you shop though, so can't help much. Just read labels and look around the tofu section maybe.

Well, basically, cheese is like a fungus, like cottage cheese is curdled milk, cheese is also like that. The enzymes are just the term for spoiled milk in the cheese.
