If you can't find it in your local Spanish store/bodega...try this:bitter orange juice = bigarade orange juice = Seville orange juice = sour orange juice Substitutes: Mix 1 part lime or lemon juice + 2 parts orange juice OR 2 parts grapefruit juice + 1 part lime juice + dash orange zest OR 2 parts lime juice + 1 page orange juice

You have already been given recipes and solutions for the bitter.
But... why would you want a bitter pernil?
May I suggest a sweet sauce? I love sweet sauce with pork. (Or at least bitter sweet).
Try a honey based sauce. I promise you'll like it!

"Bitter oranges" or Seville oranges might be found in a grocery store or a produce market that caters to a Caribbean-American population. I used to find them in Rockland County, NY at a greengrocer in a town where there were lots of people from Jamaica, Haiti and the Dominican Republic. They're also used in a bunch of Mexican recipes - I never find them in the Mexican grocery stores I go to here in Texas, but you could look. They're also called "sour orange" or "naranja agria." If you can't find them, go with Ivy Lyn's suggestions.

Don't know what part of the country you are in but Goya Foods makes a bitter orange juice. It comes in a bottle like vinegar - on the grocery shelf not fresh. It is used in lots of boricua cooking. if you cannot find it, lemon juice will work.
