I am quite fond of a good Vindaloo, but the sweetness of garam marsala is nice as well.
What is your favorite curry? and why.

I love almost all curries and Indian style foods! I spent some time in the Punjab and have had many Punjabi friends in Canada and the UK, so I have learned mostly Punjabi style and prefer that to most others.

I now live in Mexico City and it is very difficult to find Punjabi restaurants and friends. Therefore I have become much more dependent on the Internet and am learning new recipes all the time, like authentic Goan Vindaloo, etc.

My all time favorite and that of my family is a Beef Rogan Joosh, in the Moglai style. I use a red "Madras" curry mix, cook VERY slowly in the oven and 15 minutes before the end I add a cup of yogurt, 2 tblsp of ground roast almonds, 1/2 lemon and a spoon of my own garam masala (with lots of cardamom).

To put it as humbly as I can: Its quite good!

Japanese curry is my favorite. I lived in Japan and there was this special curry place called "CoCo Ichibanya" and they would make it as spicy as you wanted, levels one thru ten. You could pick out a variety of toppings, I usually went with spinach and vegetable crouquette.

I absolutely love Thai Green Curry. I think it's the coconut milk that does it for me. The first bite is creamy and flavorful, but then the spice kicks in! So addicting...I could eat bowls and bowls of it over white rice!
