Try this recipe Put thinly sliced strips of carrot in a piece of foil,drizzle orange juice and a little balsamic vinegar and olive oil(virgin) add a little frshly ground black pepper, a slice of onion,fold the foil up tight and cook at 150 degrees for 14/15 mins,delicious nice with new potatoes par-boiled then cracked(just press gently until they crack open) put in oven proof dish and drizzle olive oil over them and finish cooking in the oven for about 15mins

Carrots are cool, carrot soup is cool to. rabbits eat carrots, rabbit soup is not cool. stop stealing rabbits carrots, unless your having a carrot tea party in a bunny hole, and then its fine.

I like to cut 'v' shaped strips out of the sides of the carrot, and then when you slice it you get a shape like a flower. Its great in curries, stews, salads, sandwiches, or on their own buttered with mint sauce Mmmmm

Baked Buttered Carrots
Serves 4
Ingredients
1 medium-sized onion
50g/20oz butter
500g/1lb carrots, coarsaly grated
1/2 level teaspoon salt
5 tablespoons water
Chop onion finely. Fry gently in butter until pale gold.
Add grated carrots and salt. Mix well.
Transfer to 1/2 litre/ 1pint heatproof dish. Add water.
Cover dish and bake in centre of moderate oven ( 180C / 350F or Gas No4)
for 45 minutes (or until carots are tender

Prep: 10 min, Cook: 15 min.
1 lb. carrots, peeled and cut into 1/2 inch slices
1 Tbs. homestyle apricot spread
1-1/2 tsp. lemon juice
3/4 tsp. Dijon mustard
1 tsp. curry powder
1 tsp. unsalted butter
2 tsp. vegetable oil
1-1/2 tsp. brown sugar
1/4 cup raisins
Place carrots in a steamer basket over boiling water. Cover saucepan and steam 5-7 minutes or until almost tender. Remove carrots from steamer and set aside. Combine apricot spread, lemon juice, mustard and curry powder in a small bowl. Heat butter and oil in a heavy nonstick skillet over medium high heat. When oil is hot sauté carrots 1 minute. Stir in brown sugar and raisins and sauté another 1-2 minutes. Add spice mixture, stirring constantly 2-3 minutes, scraping down sides of skillet, or until carrots are glazed.

Carrot is good for your eye but be careful, it will be dangerous if you eat so much. It can effect your yellows or blind.
