Im really interested in all you best vegetarian recipes. i love to hear and try them :-)

Um... Bonito flakes are NOT vegetarian. Bonito is a type of tuna.

Peanut butter cookies! This whip up in a flash.


2 cups flour - I like spelt or whole wheat
1 cup natural peanut butter
1/2 cup oil - extra virgin cold pressed is good
2 tablespoons vanilla
1 cup maple syrup or agave syrup. I like half of each.

Preheat the oven to 350. Mix all the wet ingredients until creamy. Add flour, blend til smooth.

Drop onto greased cookie sheets.

You can waste your time doing that standard peanut butter criss/cross thing - but I like instant gratification. Bring on the soymilk!

I've halved and quartered this recipe. It's so quick and easy. I make sure I always have the ingredients to make it.

4 zucchini's yellow green or both
one can of corn
one red bell pepper
one hand full fresh green beans
1/4 cup onions green white or red will due
8 oz tofu pepper jack cheese

Put ingredients in a 12 in skillet with a lid in order given except the cheese. Include the liquid from the corn. Cook to boil. Turn down heat to low and add chunked up cheese. Replace lid and cook until cheese has melted. about five min.

Tortilla Spinach Pizzas

1 large soft tortilla shell
garlic butter
3/4 cup chopped spinach(cooked & well drained)
1/2 cup ricotta cheese
garlic salt
3/4 cup whole milk mozzarella

Take a large soft tortilla shell spread a small amount of the garlic butter over the enitre top. Sprinkle with shredded whole milk mozzarella cheese. Spoon on well drained, cooked spinach over the entire shell. Then spoon on in tablespoon amounts the riccota cheese. Sprinkle with garlic salt to taste. Bake on pizza pan in 400 degree oven until cheese is melted. Remove from pan onto rack and bake a few extra minutes. Be careful to watch it, it will burn fairly quickly after being transferred to oven rack.

You could use cooked broccoli instead of spinach - also yummy!

Baked Corn

INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

Mushroom grilled "steak"

Take your favorite large mushroom head and marinate it in soy, ginger, garlic, onion powder and a hint of worchestershire. Save the stems to make yourself a nice stuffing or other side dish. After 24 hours in the fridge - grill this over a low flame turning and basting with your favorite barbeque sauce. Serve on some good fresh bread (like sourdough) with condiments of your choice.

My fav is cool tofu. And this is a no brainer to make.
Take out from fridge, splash Japanese soy sauce and sprinkle bonito flakes and eat. Yums and takes no time to prepare and soooooooooooo healthy!
